I am not a vegetarian but I love the recipes in this book. The muffuletta sandwich is awesome. I found the recipes very easy and tasty. They are also wonderful for entertaining.

I bought this book mainly because I have been a fan of the recipes in the Vegetarian Times magazine for quite some time, but wanted a collection that was more geared towards watching calories and fat without getting too complicated. So far I have not been disappointed. I have made about 10 different recipes from this book and have found all of them to be tasty, these aren't real "gourmet" recipes for the most part, but they are fairly quick and tasty.

The prep time will take you longer if you aren't very skilled at chopping, but as an avid cook that has not been an issue for me. As for the comment about the nutritional info being off by quite a lot, this cookbook makes use of things like low-fat sour cream, low-fat cheese, tortillas, whole wheat buns, etc. Depending on which brand you buy of those items there can be a big difference in the calories. The nutritional software used for generating the info most likely just uses an average. I will say that I have been using their nutritional info to plan meals for my husband and myself and in the last month we have both lost weight.

I have noticed that some of the recipes in this book, for instance the mexican lasagna, are also contained in the Vegetarian Times Complete Cookbook. I'm not sure yet just how much overlap there is.

These recipes are ridiculously complicated and each one has a multitude of ingredients. FAST & EASY? For who? Martha Stewart??
I'm using this book as a doorstop.

I assume that these editors know that grains such as quinoa, amaranth, rye, spelt, kasha and [has no one ever heard of?] wheat can make fine main or side dishes. I had hoped for some new ideas for these and other grains and vegetables on which I have thrived for years. Have they never heard of porridges? If you want speed, make porridge. And quinoa cooks in about fifteen minutes. Most small or cracked grains cook in 15-20 minutes.

I had assumed that there would be SOME bean recipes, although I am deathly allergic to all beans, and SOME pasta recipes even though pasta, too, ill suits my own particular physiology. Unfortunately, this is a BEAN and PASTA book, with an occasional, genial but uninspired reference to other foods. It makes the book essentially useless to me.

Far better books are availabe: The Greek, Italian, Indian vegetarian cookbooks, whole grain cookbooks, natural foods cookbooks.

An uninspired disappointment.

With recipes including Carribean, Italian, Thai, Mexican, and plain old American flavors, you can make gourmet quality meals much faster than using traditional recipes for similar dishes. Some newly available products, like hamburger-style "crumbles" and premade polenta tubes can make some of these recipes even faster. I just LOVE the Jamaican Jerk Tempeh served over noodles, and the vegetarian "Sloppy Joes." I'm online now to order some of the others in this "low-fat & fast" series.

I love this cookbook, use it all the time. One of my favorite recipes is the Mushroom Chowder...Yum!!! BUT....The nutrition information in the book is completely innaccurate - sometimes by more than 100 calories PER SERVING. Luckily I caught it before any damage was done.

This is an excellent cookbook for fast, low-fat vegetarian recipes. All of the recipes contain clear instructions and nutritional information per serving. Per serving, no recipe in the book is more than 10 grams of fat. Some of the recipes we have tried are: Quick Bean-and-Rice Burritos, Southwestern Vegetable Burritos, Fresh Noodles Lo Mein, Chinese Vegetables in Peanut Sauce, Sloppy Joes, Smoky White Bean Soup, Caramelized Onion and Fresh Vegetable Pizza, and Sesame Broccoli. All have been delicious. If you are looking for a quick, delicious, and basic vegetarian cookbook this book is for you. I would also recommend the other books in the Vegetarian Times Low-Fat & Fast series as well as 1001 Low-Fat Recipes by Sue Spitler. You won't be disappointed.

This book has some good recipes however they aren't always fast. How can you prepare a meal quickly if you have to blanch tomatoes and wash and stem and chop 2 pounds of spinach? Some of the items in this book are fairly quick, and the rest could be modified to be much faster. But isn't that the job of the editors/authors? Most of these recipes have been culled from past issues of Vegetarian Times. This cookbook will be shelved until I have more time to cook! It was a disappointment. A really great cookbook for busy cooks is Vegetarian Express by Nava Atlas and Lillian Kate. They REALLY mean business !

Planning and cooking dinner has always been enjoyable for me.When I took a new, full-time job I wondered how I'd find the time tocook every night. This book is all about efficiency. The recipes in this book are fast, inexpensive, healthful and delicious. The smoky white bean soup, mexican pizza, and noodles lo mein have been particular favorites. Ingredient lists are short and contain mostly common items, making grocery shopping quicker and less expensive. But what I'm most amazed by is how truly fast these recipes are without sacrificing flavor. This book is a must-have for busy vegetarian cooks.

This is an excellent cookbook - especially for the beginner vegetarian who does not have alot of time for cooking &/or doesn't really know how to cook; my only negative comment is that some of the recipes are not really low fat like the Thai Noodles which calculates out to have 41% fat! The majority of the recipes are low fat though- you just need to check the serving info first. All the recipes that I have tried really are fast and delicious!

This is a great book to have on nights where you want dinner on the table within 30 mintues. There are lots of helpful tips about ingredients, substitions, as well as a nutritional break down. New vegetarians will find this book especially helpful and those of us who have been vegetarian for awhile i'm sure will find new ideas. I know I did.

This book is excellent for quick, cheap meals. The ingredients that most of the recipes call for can be easily found in the grocery store and are not expensive. As a grad student on a very limited budget, it has allowed my wife and I to eat full, healthy meals prepared quickly and at a low cost.
