This cookbook has become a mainstay in my kitchen since I picked it up at a used bookstore several years ago. The recipes are great for working singles or couples, since the ingredients are largely canned, frozen or easy to cook staples. Even though my husband is no longer a vegetarian I still regularly cook meals from it. And the no-egg chocolate cake is quite good, even with the vinegar!

I bought this little cookbook about a year ago for my daughter who is in law school. She likes to cook and trys to always eat healthy and mostly vegetarian. I hoped it would give her ideas to create interesting menus. It did. She loved everything in it and would call me and give me recipes she wanted me to try. I finally ordered one for myself. I use this book every day. I have 3 to feed for most meals so I just stretch the recipes a bit to compensate for the amounts I need -- its really easy.
My recently divorced son was visiting for a few days and commented on how much he liked some of the dishes I fixed while he was here - so - I bought another Student's Vegetarian Cookbook for him.
The recipes are very easy to prepare. It is easy to find the ingredients in most regular grocery stores and they don't take a lot of time. I can pop open the book and plan 3-4 days of meals and sandwiches and head for the grocery with my list. We are not vegan, but eat fish, eggs, milk, etc. We avoid all red meats, turkey, chicken so this book works great for us. I love the mountain high chocolate cake recipe. It is so easy and sooooo good. I made it once for a birthday party and doubled the recipe so it made two layers & filled it with ice cream and served it as an ice cream cake.

I appreciate the hints and info on nutrition and shopping tips.

I am a new vegetarian and have never been fond of cooking. I was a bit scared of getting into the vegetarian world with not knowing what to eat and not wanting to cook anything. So, I chose this book because it has recipes that have quick prep time and most recipes are for 1 or 2 servings. This is perfect for a person that lives by themselves, and you can always double the recipe for extra leftovers or for when you have friends over.

I'm not a student, just kitchen-inept. I enjoy that I am not overwhelmed by the recipes in this book and due to a fast pace life style, I actually find the time to cook these meals!

This has turned out to be one of my favorite cookbooks and I'm not even a vegetarian. The dishes are VERY tasty and are easy to make. Perfect, not only for a student, but for a single person as well.

It's an excellent starting point for anyone considering going Vegetarian especially singles and college students. The recipes are relativaly simple and the meals are perfect for a single student living off just barely over minimum wage. They aren't too big so they don't leave many left overs which can be an issue if there is a lack of space. It's not easy sharing a refridgerator in a house of five people. The lack of variety is my only problem. It's got a few great recipes but not nearly enough for someone who really needs more variety in their diet.

I was extremely disappointed with this book. I only found 1 or 2 recipes that looked good, most of the recipes look like they would be tasteless and not filling. There is a lot of recipes for pizza and stir fry, which I don't need a cookbook for. I was expecting more variety.

There is like 10 recipes for coffee??

Of all the vegetarian cookbooks I own, this is the one I turn to the most. I'm actually not a student or a vegetarian, just a idiot in the kitchen who hates leftovers, so this book is perfect for me! The portions are small, the ingredient lists are short, and the directions are clear. What more could you want?

Since I enjoy reviews by people that have actually tried some of the recipes, I'll share the ones I've tried.

Grilled Sandwich with Mushrooms and Onions- Amazing! In fact, I may just make another one after I get through writing this review.

Green Chili Quesadilla - I made this two nights ago, and my husband and I loved it. Those who like to cook may not even consider this complicated enough to be considered a "recipe," but for me, it's like a whole new world.

Pepper and mushroom pizza - Of all the pizza recipes in this book, this was my favorite!

Baked apples - These taste great by themselves or over waffles.

Baked bananas- yum.

Okay, so there were a few recipes that didn't work out so well, probably because of user error:

Sushi- I can't remember what happened, but I think I was missing a critical ingredient. Anyway, it didn't taste so good, but in all honesty, all my at home sushi attempts have failed.

Roasted Vegetable Rush - I'd recommend boiling those potatoes for longer. Also, the garlic couldn't hold up to my oven's schorching heat. And I just flat out don't like rosemary.

Overall, I highly recommend this book for purchase, particularly if you're only cooking for one or two people. If you have a great deal of experience in the kitchen, this book will probably be too simplistic for you. This book would also be a great gift for those going off to college or for teenagers deciding to be vegetarians. Enjoy!

This was one of my first cook books that my parents gave me several years ago when I was in college and in my first apartment. The recipes are wonderfully simple to follow, and usually very inexpensive. It even allows the novice cook to venture into more unique foods.

It is true that many of the recipes lack much seasoning or flavor, but this also allows the cook to experiment a little at a time with seasoning, which is what I did. (A little garlic can go a long way!!!) I also have so many vegetarian cookbooks that break the bank with one recipe when lots of expensive spices or unique ingredients are called for. This helped me a great deal in learning how to cook, and I still use many of the recipes in here. I love the falafel recipe, and I use it often for groups of friends, who give it rave reviews.

You just can't beat the simplicity of these recipes!

This book has many great simple recipes that anyone can make. The recipes don't call for some crazy fruit or product that has to be special ordered. I would have gave this book 5 starts but the fact that there are not nutrition facts suprised me very much. Considering vegetarism is suppose to be healthy.

I just got this book not too long ago and I love it! This book is great for people like me: a vegetarian on a budget (though is not limited to people on a budget). I have always wanted to eat healthier for cheap with my hectic schedule - and I found what I was lookng for in this book. This book is chockfull of creative recipes that are healthy and simple. Also includes an excellent veggie and fruit guide which gives you the skinny on buying raw produce. This is great for me when I explore and try new foods. Also has an interesting piece on beer. I have this book prominently displayed in my kitchen as a constant reference. I use this daily! Highly recommended!!

This book didn't make me a vegetarian, but I fully credit it for me STAYING a vegetarian. I found this book during my rocky first few months when I was somehow subsisting on pasta and ramen noodles. This book opened my eyes to what vegetarian eating really meant.

For a clueless guy like I was, someone who didn't know how to cook or even WHAT to cook, this book was a godsend! Unlike more advanced cookbooks, everything is fully explained - what everything is, where to get it, and how to prepare it. There are entire sections of the book dedicated to cooking techniques and describing foods and vegetables. Some would look at these section and scoff, but to me they were a lifesaver.

The recipes are all fast, easy to follow, and don't use a lot of strange ingredients. Best of all, everything tastes great! I had my roommates convinced I was some sort of chef. But what makes this book amazing are the little additions such as the rice, grain, and bean cooking charts and the little useful tips at the top of each recipe. I also love how all of the portions are measured out in cups. There is very little annoying "half of a semi-large onion" sort of talk.

The book also does well to steer neophyte vegetarians away from two common traps: fake meats and cheese. It's far too easy for new vegetarians to rely on these ingredients for lack of better options, and the book's unspoken focus on whole foods provides an alternate path (cheaper too!). Best of all, most of the recipes included are actually vegan or at least easily convert to vegan, so if you later become a vegan as I did, the book still holds its value.

My only complaint is that my copy of this book is also broken-backed (seems like a common complaint). If they are going to make a cookbook this good, they should give it a better binding because it won't spend its life on a shelf!

I have tons of vegetarian cookbooks, and this is the one I use most frequently. Most of my other books have lengthly preparation times, ingredients that necessitate trips to two or more stores, or (my personal gripe) recipes that require other recipes in the book!

The Student's Vegetarian Cookbook is no frills and utilitarian. It introduces a few "exotic" ingredients like nori and tofu, but for the most part it emphasizes simple, fresh-tasting food that can be made with ingredients from the local grocery store. One page suggests easy additions to popcorn, while another has simple suggestions for vegetarian sushi. All the recipes have short preparation times and short ingredient lists. The majority of the book focuses on vegetarian renditions of the food that surrounds a student in college: pizza, burritos, and burgers. There are also recipes for bean meals, pasta meals, breakfasts, desserts, snacks, and more.

The food in this book really does shine. One of my favorites is the White Bean and Tomato Salad. I also like the Broiled Tofu and the Bright Lemon Vinaigrette is one of my favorite salad dressings.

Today I made Orange Rice and Black Bean Salad - the combination of cinnamon, orange, and balsamic vinegar made the whole taste exotic. For dinner I had Pete's Harbor Special, a conconction of refried beans and zuchinni flavored with thyme. Even though the recipes are basic, they're far from standard. Many of them are also designed to accept substitutions. Best of all, most of the recipes make from one to two servings, so there are no boring leftovers.

The binding is cracked, the pages are stained, and the entire book is dog-eared - what higher recommendation can I give than that?!

This is a really nice cookbook because the recipes are quick and easy and don't have a long list of ingredients like many veggie cookbooks do. The title doesn't do it justice b/c I think almost everyone who enjoys vegetarian cooking would like it for its simplicity. One thing important to note, the recipes are for 1-3 servings, so probaly more practical for singles and people living alone.

... I love this book! My copy is dog-eared, food-stained, and broke-back. I live alone, so recipes that serve 4-6 are too much unless they are something very freezable. The recipes in this book are delish (sometimes surprisingly so) and made with fresh ingredients and whole foods. Most recipes are vegan as well. I am giving this revised edition to my health-conscious adult children this year. Highly recommended!

I'm not a student but a new vegetarian and needed some variety in my meals. This book was perfect. Easy to prepare, easy shop for recipes. The book includes some up-front info on basic cooking, something that was also useful. Its great, perfect little book for quick ideas before the trip to the grocery store.

It's a great inspirational book and it has a great deal of easy recipies within texmex, sandwich, soup, salat etc. It's not one of those don't harm the animal books. It gives quite some views on some of the greatest problems in the world - starvation - and how Africa could get around it. Although this is just a couple of pages in the beginning.
There is a shopping list, a chapter on how to store vegetables. Even though I've cooked vegetarian meals for years, just to focus more on veggies, before I now took the final step, this is a great book for anyone who wants to jump into becomming vegetarian or just want to learn other ways to prepare a healthy meal.

i like meat.like steak chicken and ham.its all good for your body it has lot o protien to make mussles big yay.I dont like just eating only vegtables i would die.i will never be a vegetarian yay.

I got away from my vegetarian diet about five years ago... major move, lots of stress. I tried to start back up a few times, but all the cookbooks I had or could find had recipes that were too time consuming to pull off and still feed the other non-vegetarian members of the household. This book has delicious recipes that take minimal time to prepare and have relatively few ingredients. A great buy!

I purchased this cookbook but I am not a student. The title appealed to me - Quick, Easy, and Cheap. Many of the recipes in the book are very similar to things I cook already, things I just "throw together" and call my own. This book helps me with new ideas for my meals. I appreciate the ease of the recipes, and how they are written. I am not "Suzy homemaker" so I absolutely hate recipes and recipe books, most of them just make me roll my eyes and tear my hair out. So saying I like this book means a lot!

I absolutely love this book. The recipes are very easy to follow and the ingredients haven't been hard to find (as they sometimes are with other cookbooks). The beginning of the book also has interesting information on being a vegetarian, descriptions of different fruits and vegetables, how to properly store produce, etc. Whether you are an expert in the kitchen, or just starting as a cook for yourself, I recommend this book.

When i went off to college, i no longer could afford the convienient frozen vegetarian foods (veggie burgers, chik patties, etc.) so i needed something that required little time, ingredients, and was cheap. Then i got this book, i have made about 75% of the recipes and i love them. it requires a small amount of ingrediants and suggests substitutions if the item is not in your kitchen. I love the soups and pasta dishes. The recipes are healthy, but most of all easy for a cheap, broke college student as i am.

I bought this book in October - it is now February and I have yet to make anything out of this cookbook. I love vegetarian cookbooks and was looking for something quick and easy, but nothing in this book sounded that appetizing or that filling to me (I am not a picky eater by the way). I'm sure there are other vegetarian cookbooks out there that are way better. Skip this one.

I totally fell in love with this book. For two weeks now, I have been trying recipes out of this book, and everything was delicious so far. I also did not have any troubles finding the ingredients used in the recipes yet. What I like best about this book is that it uses mostly stuff you can buy in a can or frozen, so it really cuts down on the preparation time. However, some recipes took a little longer to prepare than what it said in the book. Nevertheless, I still like this book and would recommend it to anyone.

i'm in my last year of college and have used this book over and over. i bought the revised edition for my sister who starts college this fall. the book showed me how to enjoy tasty, healthy food that's ridiculously simple to prepare, and it saved me from the freshman 15. highly recommended!

I'm neither a student nor a vegetarian, but I love this cookbook. I've browsed through a lot of vegetarian cookbooks before I settled on this one. Althought I admit to having a weakness for cookbooks, this is one that I actually use regularly for everyday food. It has loads of recipes with a small number of ingredients that are quick to prepare. My copy is already spattered, written in and worn from use. The Moroccan stew is good enough for company and there are loads of other recipes I enjoy, as well as some I am still looking forward to trying.
This book also has some basic cooking and ingredient information which does make it an excellent book for students with little cooking experience. I plan to buy a copy for my son.
