This book I bought for a friend because I love mine soooo much. I have another "popular" veggie crock pot book and it doesn't come close to the fabulous dishes in Judith's book. EVERY recipe I've cooked has been a hit. The dishes are very flavorful and attractive. Judith is a master at mixing interesting combinations and has a flair with herbs and spices. Every new dish becomes "this is the best thing you've made so far". Many of the dishes call for precooking some veggies and spices to maximize flavors - these are so delicious, I don't mind taking a few minuets to do that. Rave review and I haven't even tried the desserts yet! A great gift for people you care about - healthy, delicious and beautiful meals!

You don't need any weird ingredients to follow the recipes in this book. I have a slow cooker with stoneware that I can use on stove-top, in the microwave and in the oven. Therefore I do not mind that the recipes include prep steps. I put my onions in my stoneware, place it on the stove and then I place it in the slow cooker and I'm done. And the food tastes so much better when you follow the prep steps. Overall a real good vegetarian slow cooker book.

I'll admit, any vegetarian cookbook with "slow cooker" in the title is a must for me; however, this cookbook was disappointing. Most receipes require "pre cooking" and there were but a handful of actually delicious items. It's not that crucial to have, and for goodness sake don't pay full price for it.

Great book for working parents who want healthy families! True, there is some precooking required for recipes, but every good slow-cooker recipe out there requires SOME preparation...I usually do the prep while I'm getting dinner ready the night before, then refrigerate overnight and pop it in the slow cooker as I'm walking out the door (most recipes work this way). It's great to come home to the smell of dinner cooking, and knowing you have very little left to do to get dinner on the table!

For those with the larger cookers, like my oval Corning, get a timer to get it right. My first attempt at the mushroom lasagne was overcooked. Got it right the next time with the timer. Lesson learned. The kids LOVED it!

This is a great book! There is a great variety and everything has been easy to make, but more a slow cooker cookbook for cooks, than one for someone that wants to plop some food in and have it cooked when they get home from work. The effort is worth it, and the book suggests ways to prepare ahead so you aren't doing everything in the morning.

This book requires lot of pre-prepration and ingredients. This book is not for regular use. I did try some of the recipes and they were good, just baked them instead of using slow cooker.

I had been searching for a vegetarian slow cooker recipe book for some time. This book has been excellent! I have tried a number of recipes with much success. I have loved all of them! Some require a little more prep than others. My husband who hates eggplant absolutely loved the Tofu Ratatouille recipe. The only problem I have encountered is that the recipes are not kid friendly (my kids, at least, don't like too many of the ones I have tried so far).

I was hesitant to purchase this book because I'm Vegan and I spend a lot of my time revamping vegetarian cookbooks to fit that lifestyle, having to omit and replace, but this book was fantastic! There are many, many items in the book that are vegan "friendly" and I have to say, they are totally delicious. Last night I made the Sweet Potato and Barley Risotto - outstanding. Needed just a little dab of soy milk (or soy butter) for a creamier texture, but it was fantastic and didn't require any salt for flavor whatsoever.

The only shock for me was the amount the recipe made. The recipe suggests it serves 4. Even as a main dish, if that was a serving, I would be big as a house. It could easily serve 8-10 with 1 cup servings. 1 1/2 cups barley really expands when cooked!

I am thrilled I bought this and would recommend it to vegetarians, vegans, and meat-eaters trying to find variety alike!

I love cooking, but with a husband who usually doesn't get home until 7:30 and a toddler who is most demanding of my attention right before dinnertime, getting everybody fed was a struggle.

Enter this book.

I love 125 Best Vegetarian Slow Cooker Recipes because:
- The dozen recipes that I've tried have all been outstanding. A few of them I would go so far as to categorize as gourmet standard.
- There's a great introduction with extensive tips on slow cooking.
- I get to cook in the morning, when the baby gives me the most time to cook.
- Half the dinner dishes are done hours before dinner. (i.e. prep dishes, cutting boards, knives, etc.)
- The recipes that I've tried have been quite economical to prepare, since whole veggies are cheap. This is especially true now that I have a few key spices in my spice cupboard.
- I feel good about getting more veggies into my family's diet. We aren't vegetarian, but we still love these recipes. Sometimes I supplement with grilled sausages, chops, etc.
- My toddler has happily eaten 9/10 of these dishes.
- We're a family of three. Generally I get two meals out of these recipes, or they're great for feeding hungry guests.

This is _not_ the book for you if you're a dump-it-and-go slow cooker. Most recipes involve softening veggies, etc. in a separate sautee pan, which seems to really irritate some folks.

However, if like me, you like to cook, but want to control _when_ you cook, this is a fantastic book. For stay-at-home moms and dads, you'll get dinner prep out of the way in the morning and have time for your kids and spouse at night. For working folks, there are extensive sidebars explaining how to prep most recipes the night before, so you can come home to a hot meal.

FYI, some of our favorite recipes have been Poached Eggs on Spicy Lentils (substituting hardboiled rather than poached eggs); Sophisticated Mushroom Barley Soup; Savory Cheddar Cheese Soup; and Creamy Leek Soup with Stilton. Have fun!

I love my slow cookers! I have three of them and have six slow cooker cook books. This one is definitely my favorite. I was a vegetarian for a long time and now that I am eating meat again I still go back to this book for my slow cooker recipes. The recipes often call for some minor sauteing prior to tossing everything in the slow cooker but this prep is quick and truly enhances the flavor of the dishes. This slow cooker book is not just a "toss in all of the processed foods and call it dinner" slow cooker cook book. This cookbook uses real ingredients for inventive, healthy, inexpensive, and savory dishes. A must-buy for a slow cooker and veggie lover! Delicious meals to come home to on those stressful days...everyone should use this book!

The thing that I love about slow cookers is, you throw everything into the pot, turn it on and at dinner time you have a meal. It's simple, easy and tastes GREAT. Unless you like to cook, then put it into the crockpot, i would not recomend this book. You might as well cook the whole meal, you are already doing half of the cooking anyhow. Also.....the recipes in here have a LOT of ingredients, not very practicle for my family. We can't afford to cook gourmet meals.

This has delicious sounding recipes - however, EVERY ONE of them requires pre-cooking something before you can ever put in the cooker. My idea of a slow cooker recipe is one in which I can just dump stuff in and go. No, not with this book. What a complete waste of money, I don't have time to do all that's required to make these recipes!

The recipes in this book are great, but there is usually one ingredient in every recipe that is tough to find at the grocery store, or seasonal. If you have a big healthfood store near you, it shouldn't be a problem.

A nice collection of recipes - so many people think vegetarians don't have a use for the crock pot! Some recipes are what I would call "traditional" meatless and others the more adventurous veggie recipes. A little something for all tastes.

I have tried many of these recipes, especially the soups. And all have been delicious!! I love how the book is set up with no recipes extending to the next page - unless it is a facing page. This makes the book very easy to use. The tips prove very useful, too.

If you or someone in your family is vegetarian - or even if you are not - add this book to your cookbook collection!

I use this cookbook for its clear, useful information about techniques, timing, and ingredients of slow cooking. It's a good investment for that function. But for the most part, the recipes are useless for me. Most of them involve multi-step stovetop cooking in addition to the slow cooker. I don't use a slow cooker to add cooking steps or prep time to my cooking. To each their own; if you have the time and interest to do so, you'll probably use the recipes. Even if you don't, you can easily create your own recipes by using the information about slow cooker equipment and techniques.

I just got this cookbook as a Christmas gift, and I absolutely love it! I've been a vegetarian for almost 4 years now, and I find it very frustrating when vegetarian cookbooks have unusual, non-appetizing recipes. I want good comfort food, just without meat. I don't want to search high and low for weird ingredients! This cookbook is exactly what I was looking for. It's hard to find vegetarian slow cooker cookbooks, so I'll definitely treasure this one!

This is one of the best cook books I've every had! I use it probably several times a week. The recipes are delicious, interesting, healthy. She really knows her way around a slow cooker. I have tried several other slow cooker books and the recipes come out truly disgusting. In this book, though, the food is so flavorful and tasty. I can hardly believe it. For a busy working professional, it is just the best. You can eat dinner and then at night when there is less stress, you can prepare the meal to put in the slow cooker overnight. It will be ready by morning and you can even bring some for lunch. I have been trying to limit the fat I consume and so I do the sauteing in vegetable broth instead of the small amount of fat she recommends. It is really exciting to be able to eat such tasty, wholesome, healthy food. I have served these dishes to guests who loved them. Also, I am not a very good cook but even a beginning cook can make really delicious meals with this book. It is practially fool-proof.

I've now tried about 10 of the recipes from this book and I have to say I have been very impressed. I decided to start adding more vegetarian meals into my and my partners diet. I would say over 80 percent of the meals were pretty good. I have found that it is more challenging to add a lot of flavor to vegetarian meals. The author gives quite a few good tips (for example, to toast the cumin seeds or to crush the pepercorns or how to properly poach an egg).

The author does recommend pre-cooking or rather sauteing prior to placing the ingredients in the slow cooker which does add quite a bit of additional time but so far the results have been really worth it.

I tried other vegetarian books with much more limited success, usually the recipes lacked flavor. So if you are used to cooking a lot of beef or chicken recipes with intense flavor, and now want to augment your vegetarian repertoire then I would recommend this book.

I have made a lot of these recipes, have many of them tagged, it's a great healthy collection of relatively easy dishes. I also gave the Healthy Slow Cooker as a Christmas present to people who include meat in their dishes. Judith Finlayson really knows her stuff!

This book has a number of good recipes, which even non-vegetarians like myself can enjoy. I do think Finlayson's habit of having you pre-saute all the ingredients before putting them in the crockpot defeats one of the best features of a slow cooker (the fact that you throw stuff in and a few hours later, you eat). How convenient is it if you have to pre-cook everything and then wash that skillet later? I just have been skipping that step, without any noticeable problems. Also, she never states what size crockpot to use. I have to cook "Three-bean chili with bulgur" in two crockpots, because the recipe is too big for just one. Maybe if you have the largest size crockpot, this wouldn't be a problem, but for those of you with smaller crockpots, watch out. I recommend "Three-bean chili with bulgur"-- it makes a great sidedish. I also noticed the typo another reviewer mentioned-- try using 1 tbsp of chili power, skip the jalapeno pepper and use only 1/2tbsp of ground cumin instead of cumin seeds. Not spicy at all.

I find that many of these recipes taste the same, because she has a few ingrediants that she calls for over and over: eggplant, mushrooms, cumin. Ho hum. Plus, there is one MAJOR mistake on page 106 -- in the Three Bean Chili with Bulghar, there should only be one (1) tsp of chili powder (or less), not 2 TBSP as it calls for! Despite my gut feeling that this was wrong, I followed her instructions, but had to freeze the entire batch I made, it was INEDIBLE (and we like spicy foods). Now when I make a chili, I scoop out about 1 cup of the frozen way-too-spicy chili and add it as the spice. I should be doing this for months...

So far, the recipes I've tried from this book have been delicious and fairly easy to prepare. (I avoid anything that looks very time-consuming or that requires exotic ingredients.) I'd definitely buy this book again.

However, I wish it had these two kinds of data for each recipe: portion size and portion-size nutrition. Perhaps a subsequent edition can include those data.

I am a vegetarian with two young daughters - and no time to cook. On top of that my kids are allergic to dairy and soy. I had no idea what to cook for our family and how to find the time to cook it until I found this cookbook. Every recipe I have tried so far (and there aren't that many I haven't tried) has been really good. I start the recipe the night before, stick the slow cooker insert in the refrigerator, and then pull it out and get it going in the morning. There aren't that many vegetarian slow cooker cookbooks out there, and the others I've found have been duds, but this one is a keeper!
