This is the low-fat book cooks who care about wholesome, vegetarian-inspired food have been waiting for. Each of the more than 280 recipes are as delicious and trustworthy as those in the Moosewood Collective's previous books, and vibrant flavors and generous portions are still a hallmark of every dish. Because the Collective's primary goal is always to make great tasting food they resisted the notion of doing a low-fat book until they were convinced they could make low-fat dishes as flavor-packed as their regular favorites. "We've mostly been interested in gourmet cuisine at Moosewood Restaurant, not deprivation diet food," say the authors. "So, it's a happy surprise that the dishes we created for this cookbook don't come off as merely healthful diet foods. The food is exciting, ethnically diverse, and satisfyingly delicious. In Moosewood Restaurant Low-fat Favorites the Collective emphasizes a few changes in basic cooking techniques to apply to everyday recipes and they offer tips and ideas for sustaining a low-fat lifestyle. They bake rather than fry, replace high-fat ingredients with healthy substitutes (no artificial ingredients allowed!), and use butter and oil very moderately. What is lost in fat is gained in bold, intense flavors. "When fashioning low-fat recipes, taking a nip here, a tuck there, we sometimes need to add a little embroidery, an embellishment such as extra herbs, spices, fruit or vegetable purée, vinegar, sun-dried tomatoes, dried mushrooms, miso, soy sauce, or garlic," explain the cooks at Moosewood Restaurant. "Our gingerbread gets extra flavor and moisture from chunks of pear rather than from butter and egg yolks. Two small calamata olives enliven the Caesar Salad Dressing. A little sauerkraut adds interest to an Italian mushroom stew." Fat will not be missed in mouthwatering recipes like Guacamole with Asparagus, Chinese Orzo Vegetable Salad, Spring Vegetable Paella, Indian Potato Pancakes, and Creamy Dairyless Rice Pudding. Along with those creative dishes, one of the most appealing parts of Moosewood Restaurant Low-fat Favorites is finding low-fat variations on familiar favorites such as Macaroni and Cheese, Shephard's Pie, and Dark Chocolate Pudding. An added bonus is that the Moosewood Collective has made sure that the ingredients used in the recipes throughout the book are very accessible--easily found in most well-stocked supermarkets. The first Moosewood Cookbook--loved for its cozy, comforting food--mused oil, eggs, and dairy products so lavishly that it was extensively revised in 1992 to fit our changing diet. Now, the Moosewood Collective takes an even more extreme step: recipes in Moosewood Restaurant Low-Fat Favorites are so intentionally healthful that they put the word right on the cover of this chubby book filled with lean recipes (many dishes get the fat down to a modest 16-17% of their total calories). Still, the 280-plus recipes offer the bold, pan-ethnic flavors that have won the Moosewood Collective cookbooks so many fans.

I've been using this cookbook consistently lately, and I'm finding that many of the recipes aren't quite as flavorful as I'd like them to be. They're by no means bad -- I can really taste the veggies, for instance -- but I'd like them to be a little more lip-smacking.

This has quickly become my new favorite cookbook. I have tried about 10 recipes so far and all have turned out great. If you didn't know, you would never guess anything was low fat. I would recommend this cookbook for anyone...vegetarian or not. Lots of variety and great taste.

The recipes in this book are wonderful, but the only reason I give this four stars instead of five is because the recipes take a fair amount of time and work to prepare. If you have the time the results are worth it. However, I think the longer I work with the cookbook I'll be able to figure out shortcuts to make the recipies more realistic for weeknight preparation.

I found the main dishes in this book to be primarily good, although some require a multitude of ingredients that are not normally on hand. Every baked good I tried was awful! The biscotti was so hard I could not even bite into it! The bundt cake was soggy and heavy. I was disappointed and understand why used copies are $4.00!

One of my 5 favorite cookbooks. Very tasty foods. Easy to follow directions. Recipes are great for everyday or for company.

This cookbook has amazing recipes. I just got it as a gift and love every recipe I have tried. There are good descriptions if you want to leave out or swap ingredients, good tips along with the recipes that lead to terrific results. I have seriously impressed my meat-loving husband with the recipes from this book. And they don't taste low fat at all. Love this cookbook. Wish I heard about it years before.

The recipes in "Low-Fat Favorites" aren't time-consuming to prepare like the classic Moosewood recipes, making them more weeknight friendly. There are many "tricks" to make a dish seem creamy or cheesy without adding any cream or cheese -- all satisfaction, no fat!
I made Roasted Vegetables Caribbean Style for a potluck the other night to rave reviews. It was easy to prepare and SO good (page 227). The "Menu Suggestions" feature and the indication of time the recipe takes to prepare are great for planning family dinners or dinner parties, and are included with each recipe. I bought the Moosewood Restaurant Low-Fat Favorites Cookbook by the Moosewood Collective and put out by Clarkson Potter Publishers in 1996, because I'd heard that this was a famous vegetarian restaurant chain with great food, and knew about it since the "headquarters" restaurant is located in Ithaca, New York, where I went to school.
At first, the recipes, such as Mushroom Polenta Pie, looked pretty good to me and not too hard to make, but beyond that, I found that a great deal of Asian-inspired recipes, including Five Spice Rice and Lentil Sambar were too exotic and complicated to make for my taste, and the costly ingredients for various dinner recipes were often hard to find at my non-upscale, local grocery store. Though I liked Moosewood's recipe for "oven fries," I could have easily gotten that off the internet. And many Moosewood recipes just started looking time-consuming. Have I really wanted to make complicated Tunisian potato turnovers involving no less than 14 ingredients for my dinner on any weekday? Not really. The curried sweet potato roti recipe needs 19 ingredients and the tamale pie asks for an astounding 26. So, on the whole, I was disappointed with this book. Though I'm sure the restaurant food is pretty tasty because Moosewood shows it knows how to flavor vegetables in innovative ways, I don't recommend this book to people who need simple tasty, vegetable meals on a daily basis while on the go. I own a lot of cookbooks, but because my family likes to eat healthy, this is our day-to-day favorite. Though we're not vegetarians, we don't eat a lot of meat. We do, however, like to eat fish. The fish section of this book is outstanding. Not only does it have fantastic recipes (almost all quite easy) for fish, it also gives ideas of what to do with different types of fish - i.e., poaching, broiling, etc. So if you've ever made a mistake by taking a wrong approach with a piece of fish, this overall advice is very helpful.
Though I've owned the original "Moosewood" cookbook for over 20 years, more and more I turn to this low-fat book, because it's a bit more up-to-date in its ingredients and approach. Also, the original book didn't include fish or seafood at all. The original Moosewood book didn't often call for fresh herbs, red peppers, whole wheat pasta, etc. - things that weren't available in the average supermarket in the '70s. This low-fat cookbook, though, strikes a balance between the exotic and the everyday. More often than not the ingredients are things I already have on hand, which is key when whipping up something quickly. Also, this book is much more realistic about cooking time than the original Moosewood book. For instance, it calls for canned beans instead of soaking dried beans for an entire day. I own at least 20 cookbooks, and for day-to-day cooking for the weight- and health-conscious, this one's the best. (Review Data Last Updated: 2006-02-13 04:25:03 EST)

This book sat on my shelf for a couple of years after I received it as a gift. When I found myself with a vegetarian house guest, I thought I'd page through it to see if I could find any ideas.
Day after day, I found myself returning to this cookbook, making delicious, well-rounded meals. The suggestions for other recipes to add to the meal to complete the main dish were very helpful, and the flavor combinations were simply amazing. Many of the recipes were somewhat time-consuming (though I'm not one to begrudge time spent in the kitchen, with results like these!), and my youngest (a determined carnivore) rejected more than one meal from here. Even after our vegetarian guest departs, I suspect that I'll come back to these recipes, as they are exceptionally healthful, without leaving one feeling deprived in any way. On the balance, this is a terrific cookbook to have on hand in case you need to cook vegetarian, or you just want something that will make both your mouth and the scale happy. There's a lot that's good about this book - the nutritional information, the homey and personal feel of the prose, the inspiration to try new things - but I do end up disappointed fairly often. A couple of recipes are favourites - the breakfast section generally, for example - but a lot of the dinner recipes are really pretty complicated for mid-week meals, and then turn out not to be too different from what I could have achieved in far less time with fewer ingredients. A book to try for a few new ideas, but not one to base your new diet on.

This is a wonderful book! My favorites so far are the white bean and pepper dip, the eggplant parmesan (delicious!), lighter lasagna (exquisite), lasagna with Bechamel sauce, caesar salad--and the garlic croutons are yummy--I make them all the time now for tossed salads, the apple crisp (I added fresh frozen organic peaches instead of cherries) is wonderful. The tomato wine sauce is delicious--I've used it with a number of recipes. I really appreciated all the other reviews--they helped me decide to purchase this book, and I'm glad I did. I have another Moosewood cookbook, which I like too, but I am delighted with this as it has lowfat and vegetarian recipes. I've only had this a couple of weeks now, and I a really look forward to trying more dishes! I highly recommend this book!

I've been trying to get my family to eat more healthy, lowfat, vegetable-rich meals, despite their dislike for most vegetables. This cookbook has delicious combinations full of flavor and texture that they just can't pass up. Thank you Moosewood!
