After seeing the movie, Julie and Julia, my husband and I had to have this cookbook. There are a lot of different recipes but the book has so much detail for those "learning". My only hesitancy is that I do not eat some of the items that are included in the book such as veal and duck; however, those are my personal preferences and not the fault of the book or author. The book is in excellent condition. Definite a must have for the kitchen

I purchased this classic cookbook after watching the film Julia & Julia. I have thus far only cooked two items from it.

I love this book! It's beautifully detailed and beautifully written. I am crazy about the recipes. Everytime I try a new recipe or new technique, I am always satisfied and amazed at my results. I would recommend it to anyone who loves to cook.

i love this woman and this book is amazingly detailed. she teaches you techniques on how to cook that extend beyond the recipes. i have many cookbooks but none are as expertly written, carefully tested and beautifully presented as this collection. beware! the french use a lot of butter in their recipes

I used this book when I was young, and learned a lot from it - although I didn't cook my way through the whole thing and didn't try some of the more entertaining recipes, such as injecting a piece of meat with brandy. I bought a copy for my daughter, and now she has the two major volumes - Mastering and The Joy of Cooking.

The book was in top condition. Just like new. The owner must have carfully preserved it. I have no complaints. This was a good experience. I am reading the book to learn what I need to start cooking. I can't wait to try all the recipe's.

This book went far beyond my expectations! The detail and attention these women gave to every aspect of creating a meal is incredible. This is not just a recipe book, but an education on everything in your kitchen, from measurements and ingredients to the best equipment for the job. I have tons of cooking book, and they are just that... cooking books with all kind of receipes in them...
BUT i wouldnt label this as a cooking book, "Mastering the art of french cooking" is so much more, it really provides you knowledge of the necessary techniques, and while you read it, you feel like you are learning so so much! I have try some receipes and i am telling you, they are so clear that even a kid could do them, and they are just so tasty! i strongly recommend this book to all those out there who like me... love cooking! I am enjoying just reading the cookbook as it is more than just instructions for creating great french food, it is a whole story, even to what wines to accompany your meal.Easy to follow with plenty of interesting ingredients,so far my attempts at french cooking have been successful thanks to Julia.

So far I've only made a few things from this cookbook but everything I've made has turned out delicious! I love how Julia Child wrote many ideas for variations for a lot of her dishes.
The only thing is that I kind of wish that nutritional info was included for each dish.. (or maybe I don't...considering all the fat involved.. ha) But it's a really good cookbook that will teach you basic techniques with freedom (and ideas) to tweak a dish and make it your own. I bought this book after seeing the movie! I am/was a terrible cook; however, Mastering the Art of French Cooking is a teaching book.....and, I have made several of the recipes in this book and I love them all! I've learned how to hold a knife and how to slice vegetables and meats! I've learned the importance of proper cookware and how to care for it! My favorite recipes, so far, are the scalloped potatoes and the chocolate Queen Sheba Cake! These recipes, some easy some not, are as good as anything I have ever tasted! Also, the pan-broiled steak with sauce are simple to make and "out-of-this-world" delicious! In fact, the recipes made according to her guidelines are so good when served.....I wanted to finish the meal by "LICKING THE PLATE!" Thank you Julia!

A very good cookbook, nice instructions that are pretty easy to follow. Still a newbie cook, so it takes me a while to work a recipe out, but I'm getting there! Would recommend this book! Nice fast delivery as well!

I bought this book for my boyfriend after we saw the movie 'Julie and Julia'. When it arrived, I propped it up on the counter so he could see it the moment he got home from work. He immediately picked it up, and didn't put it down until he went to bed! He's already made several recipes and we're going through butter at light speed! No complaints here!

Even if you are a relative novice in the kitchen "Mastering the Art..." is a must have for your cookbook shelf. This timeless classic can take your meals out of the everyday mundane and into the supreme stratosphere. Looking to expand your culinary horizons? This is the only book you need to own.
Try the Gratin Dauphinois (scalloped potatoes) and you will never even think about that boxed product again. The comparison is like apples and oranges, there isn't one. The beef Bourguignon trans forms a pound and a half of stew beef into a dish fit to set before the king. Always wanted to go to Paris but doubt you'll make it there? I bought this book because I was a big fan of Julia Child's cooking show and because of the movie Julie/Julia. I haven't cooked anything yet, but I feel like I am getting a good education in how to proceed in the right direction. One of my friends made a fish dish from this cookbook and I loved it. The thing is that I do not like fish and here I was enjoying a delicious fish dish. He made a six course dinner, and when I asked how he became such a good cook he recommended this book. If I can become a good cook like he is then it was worth buying this book.

I love cookbooks and have been cooking since I was 12. However,nothing is like Julia Child's book -it is simply fabulous. It differs from other cookbooks in that there are no glossy pictures of wonderful food. What takes the place of foodie photos are excellent and simple cooking techniques.

The recipes in this book are easy to follow- sometimes you have to go back and forth when referred to a different page number for a recipe or cooking tip but worth it as what a great learning experience in food and cooking tips. I love recipes that go back to the original- good ingredients make an incredible dish that is enjoyable to eat.

I have been looking for a "back to basics book, this one is absolutely perfect as it gives altenative ingredients also. Obviously it is advanced cooking but I feel is an excellent book for the beginner as the instructions are so precise.

I have had a Penguin paperback copy fo "Mastering the Art of French Cooking" for about 40 years. It is now rather delapidated, so I am delighted to have a new hardback copy. I love the precise instructions and exact amounts given for ingredients and the results. I have also just bought a copy for my son who I hope will enjoy it too.

I got the book because I saw the movie and read Powell's book. Plus I love reading old stuff; I wish I would have bought an origional copy! Maybe I will do that for he second, but this was still a great book. Also, the 1980s addition adds side notes on how the vary the recipes for blenders for stuff like pie crusts and also mentions stuff where you should not use blenders.
I don't even eat red meat so I did not think I would like the book as it seems many old fashioned meals are all meat and potatos, but this book has so many meatless dishes and fish dishes. Actually, I like their sauces for fish and they say what fishe sauces are recommended for broiled, fried or boiled. They have many vegetable recipes and she suggets what to have them wish and some she recommeds are a main course, so it is very informative. The dessert recipes are great!(I know making desserts too often is contraversial, since it has sugar and starch, but I don't care cause I don't eat too much). Even if you just make desserts once in a while, the recipes are great to have! I love the chocolate almond cake; its a lot of steps, but you don't have to make it all in one day; just be paitient and it could be completed in a couple of days instead. I love the cream cheese tart recipe with the nutmeg! I did not even think I would like french cooking; and I am not saying I would like all french food and I have never been to a french restaurant but these recipes are great! Plus they might actually be closer to france than eating in a french restuarant, as I know people from Italy who say Italian restaurants are never like they are in Italy. I love the quish recipes; they are great for not only a brunch, but a dinner! My favorate recipes are the desserts though! When I made the cream cheese puff, everybody ate it and barely left me any! I have enjoyed trying some of the recipes from this book.
The book is important enjoyable on more than one level. I came to this cookbook by way of reading the recent autobiography by Julia Child, "My Life in France" which I high recommend. Bought this after seeing the movie Julie & Julia! The movie was inspirational for those who enjoy cooking. We wanted to try the Beef Burgonyon from the movie (I realize that's now how it's spelled, but didn't have the book in front of me to look it up!) The recipes are very easy to follow, and only sound fancy schmancy! Can't wait to try other recipes!

This is the best cookbook I've seen so far. It has no pictures or fancy graphics, but it is absolutely wonderful. It teaches valuable techniques that no other cookbooks do. It is important to read all the instructions and methods for food preparation before even choosing a recepie. I had no idea about so many things important in cooking. The book is completely addictive and the more I cook from it the more I want to learn. This book TEACHES ME HOW TO COOK!!

First, the book's primary author is not Simone Beck as Amazon says. It is of course Julia Child. Many people will say not to buy this book because the recipes are too complex and people don't cook this way anymore. But there are always special occasions, aren't there? Maybe the wonderful thing is that this book, this way of cooking, has a purpose today, that being....
maybe we should see more everyday cooking times as special occasions. The book is filled with plenty of recipes anyone can make, and since Julia Child was a stickler for using recipes, she includes everything that needs to be done, so her recipes seem a lot longer than usual. The other important aspect of this book is that it shows us how to use spices and flavorings, something maybe we no longer do often enough. Paying attention to procedures as well. It shows us HOW to cook. It's not just a huge list of recipes. It's a much more important book than that. I recommend it highly for gourmet cooks as well as for those of us who want to learn to appreciate the art of cooking, in contrast to just throwing something together. This is an attitude of cooking that makes you want to celebrate food as a way to celebrate family and friends. Don't hesitate! A beautiful book. Great classic book and the passages explaining each recipe are wonderful!!! A must for any cook worth her salt! (or butter in this case)

If you've seen the movie, you'll love the book. It's an "oldie but goodie", as they say. The book is great because it gives you a template for different kinds of foods, e.g., soup. Even though all soups are different, the book extracts the "sameness" of the various recipes and gives you the underlying template, so that you can go on and create your own soups. Or mussels -- there is only one way of steaming them, but the differences are in the sauces, flavorings, etc. Also book provides hints on pre-cooking steps, best utinsils to use, etc.

If you can follow directions, and are prepared to take the time and effort to follow them properly, then this book will guide you to some wonderful meals. I give it 5 stars because that is the book's stated goal and it does it very well.
If you are after something quick and easy to eat then this may not be the ideal book. Many (but not all) of the recipes will take significant time. Perhaps it would be better to use another book for the everyday quick meals and keep this one for the special occasions. Although these recipes do take time and effort, they are worth it. I cannot say enough of this book. I have some french heritage, have lived in France and know a bit about the food. I find so many of the tricks of the way my mother cooks and it really is helpful as my mom seems to explain her recipes properly!
I have done few recipes so far but I have read a lot of the explanations and everything is explained properly and wonderfully. I recommend this book to anyone who enjoys cooking. FANTASTIC! (Review Data Last Updated: 2010-03-24 05:04:23 EST)
