| Joy of Cooking: 75th Anniversary Edition - 2006 | |||||||||||||||||||||||||||||
|
Seventy-five years ago, a St. Louis widow named Irma Rombauer took her life savings and self-published a book called The Joy of Cooking. Her daughter Marion tested recipes and made the illustrations, and they sold their mother-daughter project from Irma's apartment.
Today, nine revisions later, the Joy of Cooking -- selected by The New York Public Library as one of the 150 most important and influential books of the twentieth century -- has taught tens of millions of people to cook, helped feed and delight millions beyond that, answered countless kitchen and food questions, and averted many a cooking crisis. Ethan Becker, Marion's son, leads the latest generation of JOY, still a family affair, into the twenty-first century with a 75th anniversary edition that draws upon the best of the past while keeping its eye on the way we cook now. It features a rediscovery of the witty, clear voices of Marion Becker and Irma Rombauer, whose first instructions to the cook were "stand facing the stove." JOY remains the greatest teaching cookbook ever written. Reference material gives cooks the precise information they need for success. New illustrations focus on techniques, including everything from knife skills to splitting cake layers, setting a table, and making tamales. This edition also brings back the encyclopedic chapter Know Your Ingredients. The chapter that novices and pros alike have consulted for over thirty years has been revised, expanded, and banded, making it a book within a book. Cooking Methods shows cooks how to braise, steam, roast, sauté, and deep-fry effortlessly, while an all-new Nutrition chapter has the latest thinking on healthy eating -- as well as a large dose of common sense. This edition restores the personality of the book, reinstating popular elements such as the grab-bag Brunch, Lunch, and Supper chapter and chapters on frozen desserts, cocktails, beer and wine, canning, salting, smoking, jellies and preserves, pickles and relishes, and freezing foods. Fruit recipes bring these favorite ingredients into all courses of the meal, and there is a new grains chart. There are even recipes kids will enjoy making and eating, such as Chocolate Dipped Bananas, Dyed Easter Eggs, and the ever-popular Pizza. In addition to hundreds of brand-new recipes, this JOY is filled with many recipes from all previous editions, retested and reinvented for today's tastes. This is the JOY for how we live now. Knowing that most cooks are sometimes in a hurry to make a meal, the JOY now has many new dishes ready in 30 minutes or less. Slow cooker recipes have been added for the first time, and Tuna Casserole made with canned cream of mushroom soup is back. This JOY shares how to save time without losing flavor by using quality convenience foods such as canned stocks and broths, beans, tomatoes, and soups, as well as a wide array of frozen ingredients. Cooking creatively with leftovers emphasizes ease and economy, and casseroles -- those simple, satisfying, make-ahead, no-fuss dishes -- abound. Especially important to busy households is a new section that teaches how to cook and freeze for a day and eat for a week, in an effort to eat more home-cooked meals, save money, and dine well. As always, JOY grows with the times: this edition boasts an expanded Vegetables chapter, including instructions on how to cook vegetables in the microwave, and an expanded baking section, Irma's passion -- always considered a stand-alone bible within the JOY. This all-new, all-purpose anniversary edition of the Joy of Cooking offers endless choice for virtually every occasion, situation, and need, from a 10-minute stir-fry on a weekday night to Baby Back Ribs and Grilled Corn in the backyard, or a towering Chocolate Layer Cake with Chocolate Fudge Frosting and Homemade Vanilla Ice Cream. JOY will show you the delicious way just as it has done for countless cooks before you. Even after 75 years, the span of culinary information is breathtaking and covers everything from boiling eggs (there are two schools of thought) to showstopping, celebratory dishes such as Beef Wellington, Roast Turkey and Bread Stuffing, and Crown Roast of Pork. Happy Anniversary, JOY! |

The much anticipated 75th anniversary edition of Irma Rombauer's kitchen classic Joy of Cooking promises to be as indispensable as past editions of this generational favorite. In addition to hundreds of brand-new recipes, this Joy is filled with many recipes from all previous editions, retested and reinvented for today's tastes.
Take the new Joy for a test-run in the kitchen with these featured recipes for Roast Brined Turkey and Apple Pie, and watch a video demonstration for their recipe for 10-in-One Cookies. And read on for celebrity chef "Odes to Joy," Joy timeline, and Joy trivia. ![]() "Great cookbooks are not just collections of interesting recipes. They are, first and foremost, books that tell a story, the story of how people lived and cooked at a particular point in time. They reveal, to borrow an expression from James Beard, their delights and prejudices, their view of the social order, their appetite for serving others food that meets the expectations of their social class. Food can be anything and everything from fuel to an object of intellectual curiosity to full-bore hedonism that transports the mind and body far from the dinner table with just one overwhelming bite. I started cooking out of an early edition of Joy when I was only 7 years old. I remember making a basic chocolate cake with 7-minute frosting. The cake turned out fine, but the frosting resembled gruel and was my introduction to the importance of following a recipe to the letter. Evidently my lack of patience and precision had led me astray. But after that first brush with culinary failure, Joy led me to many, many successes over the years; more to the point, I became enamored of Ms. Rombauer's voice, the matter-of-fact charm that led her to suggest "stand facing the stove" as a sensible first step in any recipe. The amateur but highly evolved enthusiasm that Irma Rombauer brought to the world of home cooking was a breath of fresh air after the slightly earlier era of culinary dowagers Fannie Farmer, Mrs. Beaton, and Marion Harland. To those pillars of culinary wisdom, recipes were shorthand for cooks who had spent a lifetime in the kitchen. A pie pastry recipe might be written as "make a paste." But Ms. Rombauer was there to hold our hands, to put food in a social context and give it attitude, energy, and meaning in a world where food was leaping past the narrow formality of the Victorian age. For all of our worldly knowledge about ingredients and culinary custom, few cookbook authors have managed to perfectly capture, without artifice or self-conscious chatter, the vernacular of an age. Irma Rombauer introduced us to a room in our home--the kitchen--that was to become a place of enjoyment, not just one of backbreaking labor. She represented the essence of the new American experience, which suggested that everything in life could be transformed into pleasure with nothing more than the proper attitude. And what better way to celebrate this new age than to have a smashing cocktail party with the perfect hors d'oeuvres? The original Joy of Cooking was mind over matter, the perfect mix of attitude and function. Even as times have changed, the Joy stands out as a watershed volume, a book that speaks to the very heart of who we want to be in the kitchen: producers of our own story, directors of the good American life. And, according to Ms. Rombauer, all we have to do is take that first easy step and "stand facing the stove." --Christopher Kimball, founder and editor of Cook's Illustrated

I recently bought the newest JOC because the one I received as a wedding present (46 years ago) is starting to fall apart. When I was married the Food Network didn't exist, therefore I learned a lot about food prep from this wonderful cookbook. I was pretty happy to see that, in addition to the newer recipes, they retained the old recipes in this book. You simply can't go wrong with this great kitchen bible.

This is the best cookbook ever. Great for people like me who need to know basic's at times.
Everything I have made has turned out fantastic and gotten rave reviews. You don't have to know how to cook to use this book. I've made complicated cakes that have been out of this world. Worth every cent. (Review Data Last Updated: 2008-06-14 00:33:30 EST)

Growing up, I can remember my mom cooking mostly with this cook book. Pies, cookies, anything she baked with my sister and I came out of this cookbook. When you get it off the shelf in her kitchen, it is old, used, and covered with stains. I'm getting married this summer, and my mom bought me this cookbook. This is the best cookbook to have, it covers SO MANY recipes and explains all of them in good detail. This cookbook is definitely my go-to cookbook for anything I need to cook and am not sure about, and for recipes for old favorities. This cook book should be in every cook's kitchen.

I purchased this for my son, 24, who is starting his own home in another state. As a food lover, I've had a copy since I was on my own. It was time to pass along "all you ever need to cook anything" to another generation and I hope he enjoys his copy as much as I have enjoyed mine.

This book is a Family tradition from as far back as I can remember, (circa 1964). I just moved into my new apartment and having friends over for the first time. I needed this book to cook my Leg of Lamb just right. I got the new version and it is full of all the recipes I remember and much more now. I highly reccomend this book because it's like one stop shopping, everything is in one place and tastes great when you follow the directions. I wish they had a digital version to put on the computer I have in the kitchen.

Joy of cooking has been a standard reference in our kitchen for over 40 years. My wife once owned a vegetarian restaurant and we are both avid cooks. I have cooked and ran construction camps in Alaska for over 30 years. We have over 50 cookbooks in our library but the Joy of Cooking is where we most often start when we are working up a new recipe.
We have given away many of these cookbooks to newly weds, friends and our children. If I had to choose just one cookbook to have in our kitchen it would be The Joy of Cooking. (Review Data Last Updated: 2008-04-28 02:19:17 EST)

I liked this book. It's good for beginners as it provides very detailed recipes. As a result even an inexperienced cook can prepare a decent meal. I also like it for the use of some more exotic, non-traditional ingredients such as tofu, soy, spelt, etc. It is a great, big book that covers a lot of other topics not often mentioned in other cookbooks such as cocktails, wine, beer, party drinks, tee, coffee, etc. The other good cookbook that I recommend is Rachael Ray 365: No Repeats--A Year of Deliciously Different Dinners (A 30-Minute Meal Cookbook)

My friend purchased this book, I borrowed it and it has become my favorite. I collect cook books since I love to prepare new dishes; I found this one to be great for everyday quick meals but also for dishes that last for days. Everyone has their own busy lives so this would be the perfect gift.
I strongly recommend Finger Licking Different. (Review Data Last Updated: 2008-04-02 18:30:08 EST)

JOC is an invaluable reference and source for basic cooking techniques and recipes. As with all cookbooks that are so big and hold the promise of a definitive source I use this book as a reference, a starting point mostly. Some recipes are a bit too basic and bland. I would give this book 3 1/2 stars. I really like how it's so comprehensive and also the ethnic recipes reflect the changing palate and food in the US. I do not treat it as a cooking bible if you will but a starting point because I know however obscure the dish, JOC is most likely to have it. Then, I use the basic recipe as a springboard to jazz up the dish in the way I want.

Originally a self-published book in 1931, and no less than nine revisions later, this thick volume of recipes (it's got to be at least 3 inches thick) is a great addition to anyone's cook book library.
But wait! This book is not merely just a collection of recipes- although with 4000 classic recipes and an additional 500 new ones, that would make it worth buying alone. No, this cook book stands heads and shoulders above the rest because its what I call a "teaching" cook book. It contains recipes for just about every dish or food category you can think of which are arranged in various sections throughout the book. Then, at the beginning of each chapter, there is a kind of introduction which goes into detail about that category. For example, the section on grains starts off with an almost encyclopedic explanation of the types of grains, their anatomy, how to combine them, and so on. A handy, informative cook book with plenty of choices, there is sure to be something for everyone and even healthy eaters will find a great section on what makes up a healthy diet, how many calories you need, etc. Also recommend The Sixty-Second Motivator for readers who need more motivation to eat healthier and have trouble changing their diet habits. I am an avid cook and have loved previous editions. This was my wedding gift and I was very excited.
The binding on my new edition began to split and fall apart within a couple months. They glued the edges of the paper to the binding in a way that I can't imagine lasting through the years as my mother's edition did. It's actually a loose stack of papers within the cover. Also, there are numerous recipe mistakes, more than are catalogued on their website. Some favorite recipes are gone. They really rushed this one through the printers and I can't believe how much they're charging for it. My advice is to look for a used copy from the 70's or 80's (Review Data Last Updated: 2008-03-04 13:45:36 EST)

This is the #1 best cooking book ever. Huge substitutions list so nothing can keep you from making that recipe! Great reading on any category of food. Excellent meat cooking tips that made my filet mignon absolutely perfect for a dinner party!!! You just won't find a better all around cookbook. Perfect for newlyweds or anyone as a gift. I like the updated version. Had the older version (1970s), and decided to get the 75th edition & it is fantastic. Very useful info.

I bought this for my girfriend as a gift. She doesn't cook and I was worried I might offend her. Or I should say, she _didn't_ cook. She does now. The first time she used the book we cooked together and we made chicken piccata for my family. She's not a pro chef or anything now, but she's learning to not be afraid of the kitchen! A good start. And for all you feminists out there who would have such harsh words for me; I already cook! I got her the book because I heard such good things and she wanted something other than Lean Pockets! I am going to get myself a copy now too!!

Joy of Cooking: 75th Anniversary Edition - 2006
I learned to cook with recipes and tips my mother gave me from her 1960s edition. I hadn't been cooking much for about 15 years, but realized that I could really use the hints and tips that the Joy of Cooking provides, so I bought this one. The new edition does not disappoint! The classic and the updated all together with the same helpful & practical tips for cooking and entertaining. I used several recipes (desserts, dips, salad, to mixed drinks and sangria punch) I had never tried before for a party, and all of them were a great success! The processes involved in each recipe are quite well explained, and the booked is packed with information about food and the tools. I was also very pleased that they kept the chapter on home canning and the making of preserves. I highly recommend it for anyone at any level of kitchen expertise. Joy of cooking has been my favorite cookbook for years, both for recipes & as a reference book. I was thrilled when I saw that my daughter-in-law put it on her wish list. I had wanted to get it for her, but of course did not want to imply she needed it. She is planning on going to culinary school & sees it as a basic reference which she will need there.

We own two previous editions that are falling apart but are still our most used cookbooks. The older one (80's) is better than the 90's version, so we have kept both. The 75th anniversary edition is said to be more like the older one. I hope it turns out that way but can't say for sure yet.
I would have preferred a binding that lies flat on the counter, but that is not coming out for almost two years! (Review Data Last Updated: 2008-01-13 05:52:14 EST)

I still have the original Joy of Cooking which is my cooking bible. A friend gave me the newer version. I have now tried about ten recipes from this version and ALL turned out shockingly. Some of these recipes were excellent before and it's almost as if they tweaked them without testing the recipe. I have wasted way too much good food to trust them again! I will stick with the well worn original and sell this as a used book to some poor soul.

As a novice cook, I first tried to cook the foods I was most interested in with mixed success. Then I discovered Joy, and it literally changed my life and the way I experience cooking. I have read dozens of cookbooks and I have never found one as consistently readable, practical and generally excellent as this one. The accolades heaped upon it are not hype but honest praise for what is probably the greatest single volume of culinary information ever produced.
Joy is basic without being bland or simple, a task that consistently impresses. It's not always fit for the epicure certainly, but it's not intended too. Those are recipes to cook once a week at most, these are recipes to cook every day for the rest of your life. Need to know the BEST way to whip up a weeknight meal or a special family dinner? Joy will not only satisfy but usually impress. The sheer range of the book is surprising as well. The usual fare is here but so are recipes on cooking bear or turtle, a vast array of deserts, drinks and everything in-between. Not to mention the chapters on ingredients, setting a table, tips for entertaining, etc. Whenever I think of a dish I'd like to make, I pull out Joy - and sometimes I compare it against a more specialized cookbook. 3/4rs of the time, Joy wins. I can't really say enough about how much it's helped me become a better cook. A MUST own. (Review Data Last Updated: 2008-01-07 01:16:56 EST)

I received this as a gift 20+ years ago and purchased a revised edition about 10 years ago. It is the BEST cookbook I own and am giving it to my niece for Christmas. I'm sure that whatever questions she has in the future she will be able to find the answers in "The JOY of Cooking". This is truly the only cookbook anyone will ever need.

The day I found out my grandmother was dying was the day I got this book.
She was sick and I was very hopeful that she would get better. She was lying on the couch in the living room and asked me to boil her a potato. I, being 19, had NO idea how to boil a potato! But I did not want to bother her about it - so I went into the kitchen and started up the pot of water. Not only did I ruin that cute little potato ... but I saw my grandmother lose it! She came into the kitchen and saw the whole potato (not peeled or cut into fourths) hanging out in the pot and just lost it. She started crying... How can I leave you if you can't even boil a potato?! My grandfather happened to arrive home at that moment. He did a big sigh when he heard and saw the commotion. My poor frail grandma rolling around on the stool (too weak to stand up even), throwing pans around as she was trying to find another pot to make her potato in. He got her calmed down and fixed her another potato. But before it was even boiled she made him go out to the store "right this minute" and buy me the "Joy of Cooking" cookbook. She knew that she would not always be in the kitchen with me to help me cook -- so she got me a GREAT back up. That is how I knew my grandmother wasn't going to get better and that I had better learn how to boil a potato. In the years that have followed (quite a few of them too) I have used this book to learn how to cook. I love their instructions for cooking beets, steaming artichokes, roasting lamb, pork chops, pork tenderloins, chocolate cake, great pie crusts ... the list goes on and on. For anyone learning how to cook / wanting to cook or needing another great book - I highly recommend this and thank my grandmother for giving me great instructions on how too cook. This has great sections describing entertaining, meat cuts, baking, etc. for the beginner and it's a great reference book. However, I've made quite a few recipes from this book, and they're all forgettable. I haven't repeated one I've tried, and I've had this book for a year. Tastes like cafeteria food.

At first this book seems overwhelming-- thousands of recipes in tiny print on whisp-thin paper, no nice glossy pictures or gushy descriptions. But once you start reading, you're hooked. I checked this book out from the library, then renewed, checked it out and renewed it again. Then I decided I needed my own copy. I love it! It gives great, delicious and classic recipes for just about anything you could think of from breadfruit to porkchops.

I was so happy to get my newer edition of this cookbook. I've had the 70's version and two years ago bought the late 90's version. Loved those updates. Bought this 75th Anniversary edition for my condo and recently used it to bake some old reliables: what a bust. Not only are the recipes altered (for the worse) but they have eliminated many, many of the best and most reliable recipes. For this cook it's back to the 90's version.....far better!

The updated version of this classic cookbook is just as useful, informative and thorough as the original - just more modern.

I grew up, not with Betty Crocker, but with the Joy of Cooking. For a 14-year-old guy who wanted to learn everything on his own, this was the perfect kitchen companion. This cooking bible gave me not only the basics, but expanded my horizons with great, simply presented and easy-to-follow recipes. The joy of cooking has been the genesis of many great meals over the years. I highly recommend this book for everyone from novice to expert.

If you have only one cookbook in your kitchen, make sure it is this one!
I purchased this because it was recommended by Lin Pardey as a very useful item to have aboard the yacht. It is a comprehensive cookery course and reference book all in one volume. This new edition is fully up to date on the latest trends in cookery and food presentation. Recommended. I bought the 1975 edition as my first cookbook after I was married in 1983. I am happy to report that the dust jacket is faded, yellowed, stained, and quite dirty; the spine of the book is cracked, and the pages are dog eared. I learned to cook with this book and still use it regularly. After all this time, I decided to upgrade to the new edition. It was so tempting - that bright white, clean, brand new cover was calling out to me. So I bought it and brought it home without showing it to my husband who uses it on the weekends to make his breakfast crepes, which are just like the ones his French Canadian mother made. I decided I would give my old book to a very good friend who lives in the city, doesn't really cook, and doesn't own a cookbook. I inscribed the front page to her (saying I hoped the book would inspire her to cook as it did for me) and then told my husband I had given it away. He said "Wait, that book has my crepes recipe". I said "Don't worry, that's such a basic recipe, they wouldn't have gotten rid of that". So I asked my friend to look and see if the recipe was still in the new book, and sure enough it was gone! How could they remove the "French Pancakes or Crepes" recipe?!
My husband said "We have to get that book back!" I said "No, I can't ask for it back, we'll just copy the recipe into the new book." So I asked my friend to bring the book over so we could copy the recipe into the new book. Meanwhile, she had brought the book into work and had a good laugh with her co-workers going through the book, picking out recipes for meals that she would never make, and looking at the old illustrations. She pointed out the best illustration on page 515 on how to skin a squirrel. It's great! It shows disembodied gloved hands and a boot stomping on the tail and pulling the skin off in one fell swoop. We checked the new book and it's gone along with the crepes recipe! Well that was it. We had to ask for the book back. I gave my friend the new edition, tore out the page that had my inscription to her on, and put the book back in it's place on my kitchen bookshelf. I will never give away my 1975 edition again! I was prepared not to be pleased with the "new" Joy of Cooking, but I was forced to purchase it when I lost my 40 + year old copy - the green book. When it arrived, I noted that it was much "fatter" and found that this new book contained a larger assortment of information and additional recepies. I looked for my old, favorite recepies and was not able to locate them until I began to look at alternative names/locations for them. And, to my surprise, everything was there! The book is easy to read and to find what you need to know. I was pleasently surprised. It now sits in the favored cookbook location, at my fingertips for consult or review or experimentation in the kitchen.

Not only is this a great cookbook for literally tons of recipes, I use it as a cross reference. Whenever I find a great recipe, I look and see if the the Joy of Cooking has a version. Now if the Joy of Cooking version measurements are way off on something, then I know I cannot trust the recipe.
If you have a couple of recipes from the BHG, martha, etc. that just don't work for you, do a side by side example to the joy of cooking's version and I bet the "problem" will jump off the page. P.S. Always sift the flour for the pancake recipes in the book or they will be thick and you will literally have to spoon the "batter" out. (Review Data Last Updated: 2007-11-16 15:12:38 EST)

This is a terrific reference that my husband and I use all the time. We have many cookbooks, but whenever we have a question about how to try something new, this is the place we always go and the place we always find an answer.
