In Italy there are no mothers who are bad cooks. Can this be possible? In the case of Giuliano Hazan, whose mother is Marcella Hazan, yes. Marcella is the doyenne of Italian cookbook authors published in the United States. And Giuliano is no slouch, either. Though his first cookbook, The Classic Pasta Cookbook, is lamentably out of print, it is a laurel upon which he could have rested. Fortunately, Giuliano Hazan appears to be a restless man. "I learned to cook because I like to eat well," he writes in Every Night Italian. "Satisfying food does not have to be complex or take a long time to prepare. Often the simpler it is the better it tastes, and simplicity is what Italian cooking is all about." To this end, Hazan has compiled a collection of Italian recipes any cook can serve to any family every night of the week.
He wisely opens his book with two sections: "The Italian Pantry," a list of all the basic ingredients to have on hand, and "Some Essential Techniques," such as chopping an onion, cutting a pepper, trimming an artichoke, and boning and filleting a chicken breast. The book is then divided by appetizers, soups, pasta and rice, fish and shellfish, meats, vegetables, salads, desserts, and menus--120 recipes total, all flavor-heightened and with an eye cocked at the clock. Chicken Braised with Porcini Mushrooms has a substantial sound, and yet you are only looking at 20 minutes of prep time and 60 minutes from start to finish, leaving plenty of time for a Insalata Caprese with tomatoes, mozzarella, and basil. Hazan's version of Ribollita, the classic Tuscan soup, takes two-and-a-half hours from start to finish, but only 30 minutes to prep. The Bucatini with sausage and onions is a straight shot at 30 minutes, start to finish. Spend a little time with this book, master the recipes, and you will no doubt find yourself agreeing with Giuliano Hazan that Every Night Italian is a perfectly plausible idea. --Schuyler Ingle |

I bought this book because I was such a fan of his mother's. At first glance I was slightly disappointed, since, compared to the Classics of Italian Cooking, it is a relatively thin volume with far fewer recipes. However, it is a great cookbook. I have tried out roughly 1/3 of the recipes, but every one of them has turned out great the first time. (His "Christmas Tree Salmon," "Lamb Shoulder Braised with Tomatoes and Red Wine," "Parmesan-Encrusted Rack of Lamb," and "Pompano Fillets with Garlic and Rosemary"--made with mahi-mahi--have become tried-and-true household staples.) He is true to his word--he gives both the prep time and the time from start-to-finish, and I have found those estimates to be right on the money, particularly once you've made them more than once and already have the procedures down pretty well. Between this book and his mother's Classics, one thing is true--pretty much every night IS Italian at my house! if for no other reason than that I have yet to find such simple yet delicious recipes anywhere else.

I don't think that I've ever written an Amazon review before, but I just had to chime in about this book. It's simply fantastic, and everything IS really easy and straightforward to prepare. I love to cook but hate to fuss, and this is the perfect cookbook for me. The ingredients are all easy to find and there are always the right number (not a lot of extra ones that don't make much of a difference). I can recommend this book unequivocally.

I have been impressed with this cookbook so far, and I do recommend it. The reasons why:
1) I was sick of the same old stuff that I always make. 2) The recipes I have tried (10 or so now) have impressed me as far as taste. 3) I have learned some new cooking skills. 4) The author explains very well what to do, and since I am no culinary master, it has been very beneficial to me. 5) I like that the author writes a bit about each dish. 6) The prepared food keeps very well, in fact the flavors have enhanced after a day or two in some cases. 7) Even though Italians use a lot of olive oil, I feel like I am eating better because so many of the ingredients are so fresh. Vegetables obviously play a very large role in this style of cooking. A few things I do not like about the actual book (the quality of the recipes is hard to argue): 1) I would like to see what my dish is supposed to look at, but very few things are pictured. 2) I do not live in a large city, and I have had a difficult time finding some ingredients, eg. veal, seafood selections, arugula, fresh mushrroms other than white or cremini, amaretti cookies. I have found some things after looking in several different stores. Italy obviously is going to have a lot of seafood available...inland U.S.? Not so much. 3) Several recipes use raw eggs, and with an immune deficiency in the family, this is not okay. Luckily, I have discovered pasteurized eggs, but they are not the easiest to find. This text is written with American equivelents so conversion and guessing quantities is not necessary. The recipes make delicious dishes and as advertised, in " 45 minutes or less". The cooking methiods and hand me down recipes are perfect to experience the freshness that is Italian in a short time frame of preparation. It is such a better option than the fast food take out routine! This is an abslolute must for a diversified culinary kitchen!

There is so much to love in this cookbook! The recipes are not difficult to follow, and the ingredients aren't so exotic that they're hard to find. You can use this cookbook for everything from family meals to dinner parties.
The book begins with an essential list of ingredients for the Italian pantry. This is a list of ingredients that should be easy to find at most grocery stores. Another nice feature that you'll discover as you go through the book is that the author will give ideas for substitutions in case you don't have something on hand. A nice section of diagrams illustrate techniques for everything from cutting a pepper to deboning a chicken. There are even instructions for how to sharpen your knife. There is a section of mouthwatering looking pictures clustered near the front of the book. I wish more cookbooks these days would illustrate each dish, but that's a minor quibble here. The recipes are fairly straightforward, so you don't really need a picture. The cookbook is divided into the standard sections from appetizers through desserts. Everything sounds delicious! Reading through the dishes makes you want to get started cooking! The book concludes with combinations for "Simple Family Menus," "Elegant Sit Down Menus," and "Buffet and Picnic Menus." I was hoping to buy an Italian food cookbook. What I got was a cookbook about Italian "inspired" creations that he, the author, himself created. Mostly this book seems like a pat on his back for he mentions how everyone loves this or that dish every few pages....and he is proud because he made all the recipes himself!! Not authentic to me. Hardly any recipe contains garlic and I feel forced to doctor the recipes in order to get any flavor. My only hope for this book is that the deserts (I haven't tried one yet) makes up for the rest.

I"m so glad I ordered this cookbook. The recipes are easy and the ingredients (except for a couple of things) are available in the local supermarket. Being of Italian descent myself, I was looking for something different than the usual that was simple & quick to prepare. I found it in this cookbook and every one of recipes that I tried was delicious. The Meat Pie "Pizza Style" is a huge hit in my house. Bravo!

I think this book is not meant for me. There was too little pictures. Dishes that have vegetable that i didnt like. Lack of recipe for pasta. i guess i dont know much of about italian food, but most of the food doesnt sound good because of whats in it. Personally i do not recommend it.

One of the best things about this book is stated on the cover: "...Delicious Recipes You Can Prepare In 45 Minutes Or Less". It's great to have recipes that are simple yet delicious and also leave some room for nice presentation.
I'm a fairly novice cook but I've found the directions in the book to be simple to follow, and the finished products have come out looking great as well as tasting great. So far I have only tried about a half-dozen of the many recipes, but it's already a winner to me. In particular, Hazan's recipe for parmesan cheese encrusted rack of lamb is so simple and tasty at the same time that it makes you wonder why we pay so much for lamb in a restaurant. I have had this book for a few years now. A good sign is that the pages are starting to fall apart. I use this book a lot - there are some recipes that I cook on a regular basis like the Shrimp and Linguine. This is a great book for people who don't have a lot of time but like to cook fresh, good food although there are some fancier recipes for dinner parties etc. A lot of the recipes are very simple and quick to make but taste so delicious. Even a simple Tomato and Onion Spaghetti tastes great when made fresh. My favorite recipes include the Snapper with Tomatoes and Olives, Chicken breast with 3 Peppers, and Grilled Lamb Chops with a Lemon and Vinegar Sauce. Definitely a book worth having.

This book is one of my cookbook "foundation" books. Perfect for the cook who lacks confidence in the area of Italian cooking, but knows fabulous Italian food when s/he eats it. Lots of tips that push a dish from being "good" to "fabulous". I use it at least once a week.

I'm learning to cook Italian food and started here. The recipes are easy to follow (for the most part) and are absolutely incredible! Every thing I have made so far has received rave reviews from the people that have tried it. The recipes range from appetizers to deserts and for the most part use readily available items (although I still haven't found juniper berries anywhere local). Some of the recipes are even cooked on the grill. I also highly recommend the Classic Pasta Cookbook by Hazan as well. It is still available used and many of the dinners I have made for people, I have built the menu from these two books.

The recipes are very easy to follow, delicious and the ingredients are easily accesible. The cooking techniques and preparations are straightforward and easy enough to follow. Each recipe come with an estimate time to prepare it from start to finish and it really does falls within that time limit. I can easily use 70% of the recipes in this book for everyday cooking, not just for special occasion.

I used 2 recipes from this cookbook for a four-course Italian-style meal. It was a lot of prep -- but the recipes were simple and easy to follow!
