Great book, has all of the Ben and Jerrys recipes. But follow exactly. I added extra cream and got the greasy feel in the top of my mouth.

Initially, I was very excited for this recipe book, but after reading it, I realized that none of the recipes with eggs had you cook them. - just mix the raw eggs and put them in the ice cream maker. No thanks. Don't think I will be able to use any of the base recipes. May use the interesting flavors with different bases from a different cookbook.

I have used the book and had good ice cream. I used skim milk and splenda so it is not as cream as I would like but then I am low carbing it. My parents also bought this book and tried making ice cream. Theirs was wonderful from what they said over the phone. Mother used whole milk and real sugar so the extra fat in milk should have made the ice cream a bit softer. The less fat the more like an ice cube while the more fat you use the more creamy it will be. Use whole milk and the heavy cream for softer ice cream. There is no such thing as dietary fat to my knowledge so skim milk will make hard ice cream. Let it sit out a bit before eating and it will be fine.

Overall, this is a good book for making ice cream but not heavy on the technical stuff. As a chemical engineer there is not a lot of detail I don't already know so all I care about is that the ice cream is what I want.

As for cooking eggs... I am not too worried. Buy fresh eggs for your ice cream and I don't see a problem happening. Use old eggs and I expect you will be spending a lot of time sitting on the toilet. Some like slowly heating the egg base to make a custard base some don't care. The eggs are used as a emulsification agent to hold the fat and water together. Use fresh eggs and you should be fine. If not be careful not to make scrambled eggs in the base.

I have a number of ice cream recipe books, and I also have my mother's custard-style ice cream recipe from way back. While I love custard-style ice cream, it is a lot of work, and sometimes I just want to throw together some ingredients and toss them into my MUSSO LUSSINO 4080 (the best ice cream maker there is for the home). That's where this cookbook shines. The recipes are great, and very fast.

One caution: Most of the recipes use raw eggs. I personally don't care, since I buy only locally produced, organic eggs from free-range, non-debeaked chickens. I figure that how happy any animal is, whether human or beast, makes a huge difference in its health, and so far I have never had any problems.

However, if you have concerns, you can use pasteurized egg products. Or you can use an excellent alternative cookbook, The Ultimate Ice Cream Book, which has many recipes that don't require eggs at all. Just be aware that eggs make a big (positive) difference in taste over recipes that don't use eggs.

Nice collection of recipes for my ice cream maker since KitchenAid doesn't include alot and we love Ben and Jerry's just figured I could make my own. Recipes are perfect! I make them in the KitchenAid ice cream makerKitchenAid KICA0WH Ice Cream Maker Attachment and save money by making my own for a larger group - those little pints don't go far with a group.

I really enjoyed reading this book before trying even one recipe. This is the best recipe for Ice Cream that I have ever tried. Once you know the basics, you can relax and enjoy making ice cream. I don't wear my self out breaking eggs whipping whites and blending in order. I just toss the ingrdients blend and freeze. I haven't seen a bad batch since the time I used too much butter for butter pecan. Even with that "gummy" batch, I received compliments. Ain't that what its all about?

I bought this book with my Cuisinart 1 1/2-qt ice cream maker. I highly suggest doing this as well. All the full recipes fit perfectly and they can easily be halved to make just a small amount of ice cream. The only drawback for me is that they don't have frozen yogurt recipes in this book so I'll have to figure it out some other way. However, the ice cream is amazing, just like from the store, and the sorbets are good, too.

It has good recipes but I was concerned that they did not address whether the raw eggs should be slightly cooked before using. The internet sites said it should be combined with the heated cream, otherwise look for pastureized eggs in the supermarket (which I could never find)

Great little book. It was fun reading about the history of Ben and Jerry's. The writing style was easy and homey. We have made several batches of ice cream from the book and they were great. The recepies were easy and the explanations were great. We found we could save money by making our own ice cream and what we made was better than anything we would buy. Again, great little book.

I've recently started making homemade ice cream, and trust me, using this book your culinary experiments will turn out way better tasting (and possibly better for you) than the commercial kind you can get down the street.

When you buy ice cream from the supermarket, a lot of the time you're buying plenty of air that whips into the final batch and bolsters the volume of that pint that looks yummy from the picture on the carton but ends up tasting like cold lint from your dryer vent. When you make it yourself you control the ingredients down to your favorite chocolate or the freshest peaches. And who better to take recipe advise from than the kings of ice cream making?

Most of Ben & Jerry's most famous flavors have their secrets deliciously divulged in this book along with anecdotes from the duo and explanations as to why you shouldn't skip ingredients. The newer flavors, like my favorites Phish Food and Americone Dreams, are sadly missing since they've only been created since this was published. But there are still loads of recipes and plenty of variations.

This book had everything from how to make your own hot fudge sauce, to the possibilities of beer sorbet, to the intricacies of blending your own New York Super Fudge Chunk. However, if you want that mint chocolate chip to LOOK like theirs...don't forget to add a few drops of food coloring. That little detail is overlooked in all the recipes and lets face it, if we're going to the effort of churning our own ice cream we want it to not only taste like the pints we idolize we want it to look authentic as well.

Bought this book to go with my new KitchenAid mixer and Ice Cream Maker attachment. I had never made home made ice cream before, but the recipes are really easy (I've made two batches now). The ice cream is really creamy and rich, just like Ben & Jerry's at the store!

This is our first ice cream receipe book purchased for my daughter's 9th birthday. She loves it and so do I. I like the tips offered and some background information on Ben & Jerry's experiments with ice cream making. The book has a nice variety of receipes that have so far proven to be accurate.

Ok I just love this book. No only excellent recipes for ice cream but also for cookies. I love the fact that it's not just some plan boring book with words printed on white paper but it's colorful and the little cartoons are cute. One thing though?? Where is Caramel Sutra??

This is the PERFECT book for anybody who has an ice cream maker. I'd go so far as to say that it's the only book you need if want to make ice cream at home. This isn't merely a book on getting the popular Ben & Jerry's flavors you see in the store, but everything else you'll ever need to know about ice cream making.

What's best is that B&J explain all their trials and errors in plain English. They'll tell you what works and what doesn't, and why. There's still more than enough room to experiment, but using this book can save you countless hours of quarts-gone-bad.

I bought my first ice cream maker last fall at Sharper Image. Although the machine came with some sample recipes, I wanted to buy some books for some more in-depth ideas. Bruce Weinstein's "Ultimate Ice Cream Book" was huge, but almost too big, and a little strange to navigate through. But this little Ben & Jerry's book is excellent.

The first chapter on Ben & Jerry's history is a fun read, but it's the second chapter, "Ice Cream Theory", you'll definitely want to pay attention to before diving into the recipes. This is an excellent 8 page crash course in ice cream 101. What exactly makes ice cream the way it is? How precisely does heavy cream match up with light cream, whole milk, condensed whole milk, or evaporated milk, and what are the different results from using these? How exactly do sweeteners, eggs, fruit, and salt fit in to the equation? How do you add the stuff like cookies and nuts, or liquor?

The next section gives you three different recipes for "sweet cream" bases, before going on to the individual recipes. Most of the recipes in the book just call for creating one of these sweet cream bases first, then adding whatever else makes the specific flavor you want. It's set up as one recipie per page. And the ice cream recipes are further broken down into other categories: chocolate variations, sorbets, using fruits or cookies, etc.

In addition to all of that, the book includes recipes for desserts like brownies and cookies, plus recipes for sauce toppings, fried ice cream, and a number of other strange concoctions.

I guess my only complaint would be that the book is 20 years old and could use some updating, namely some more recipes on other B&J flavors that have come and gone since then. Then again, maybe it's up for us to explore that. Oh yeah, and do get yourself a gym membership! You're going to need it after using this book.

I got this little book, because 1) I like recipe books, and 2) I'd been making homemade ice cream with a bit of success, but not really realizing the mechanics. The history, along with the recipes, are easy to understand; they explain why you should do it this way, or not - which helps alot of people, including me. I had to get over using raw eggs, which I did, and the very first batch of ice cream was excellent! The most difficult thing about this book is deciding which recipe to try next. There's only 5 shelves in my standup freezer...

I love this book ... unfortunately I don't seem to be able to hang on to one!! 3 of my Kids have ice cream makers and now all have copies of the book I bought to use with mine ... oh well gonna order number 4 soon.
If you like ice cream, and who doesn't, why not learn from two of the best .. Ben & Jerry.
The recipes are straight forward and easy to make. The results delicious. There are many Ben & Jerry favorites here and an interesting writeup on how these great guys got started.
The cream base(s) gives you a great jump off point to experiment with your own flavous.
Fun to have the Grandkids help out and then eat the results of their fun times.
If you own an ice cream maker THIS BOOK IS A MUST.

The Ben and Jerry book gets a five star, but what happened to the one-day shipping from amazon?Purchase price on 12/17 was $9.95, one-day shipping and handling was $17.98 and the book arrived AFTER 12/22. We were gone to be with family. I had to re-ship the book after Christmas to its final destination with the family we'd been with. Bummer...late and a very expensive route and reroute of shipping.

The recipes in here are true to the Ben & Jerry's products you find on the frozen section of your grocery store! I easily achieved amazing results with the recipes they provided. (Try the Peanut Butter Fudge Ribbon variation- you will not believe it!). This book is very pratical and written with great humour.

I strongly recommend this book to the novice with a sense of adventure as well as for the more experienced Ice Cream epicurian.

This book has a lot of great recipes. If you are want some recipes to make ice cream with your home ice cream maker this is a great book for it. It offers a great background on Ben and Jerry and a lot of tips on serving and such. Easy enough for a beginner but great for someone who just wants some great new recipes.

This dessert book is awesome! While I recommend not using the egg bases they have because they get icy, the recipes themselves are tasty. I like that I can try any base I want until I find one I like, then just use one of these yummy recipes with it. Actually, I got a Cuisinart ice cream maker and the basic vanilla base tastes MUCH better then the egg ones listed in this book. If you love Ben & Jerry's and you make your own ice cream, this book is a must!

I bought this cook book with my Cuisinart Ice Cream Maker. Works perfectly for the amount that fits in the icecream maker, and if you are experimental, it's a good place to start. Lots of good ideas, easy and pleasy. Best basic book I have seen.

The first time I tried a recipe out of this book, it was way too icy. The next time, I took the time to read the intro and all the technical information and the next batch of ice cream was way better. They tell you ways to make your ice cream more or less rich. I have only tried about 4 of the recipes but first time was the only time I was disappointed.

While I'm not the best cook in the world, even these recipes have turned out well for me. I love this book and now I'm hooked on trying out new flavours. They are easy to follow and definately great tasting and creamy. I love the Oreo Mint especially. When Summer rolls around here, I can't wait to try the sorbets. This is definately one of the best dessert books I've bought and you don't ever need to get bored with options when there is more than 90 recipes to try. Go get this and have fun in the kitchen. It's great.

My favorite flavor of ice cream is Coconut Almond Chocolate Chunk from Ben & Jerry's; it's only available in their stores, and isn't expected to be available in grocery stores anytime soon. When I was on their web site, I discovered that they had published a cookbook that contained the recipes of most of the Ben & Jerry's flavors, so I immediately purchased it so I could make my favorite flavor at home.

This book is casual and fun. There are colorful drawings throughout, and the recipes are quick and easy. It looks almost like a children's cookbook, and is written so that anyone--child to adult--can understand and follow the recipes.

In addition to ice cream recipes, there are also recipes for refreshing sorbets--mostly fruit, but even one for beer sorbet, brownies--which can be used as an ingredient in ice cream or eaten alone, cookies for ice cream sandwiches, sundaes, sundae sauces, and a few specialty desserts. Every recipe I have tried so far from this book has been quick, easy, and good.

The book also has a history of Ben & Jerry's Ice Cream, helpful hints and notes on ice cream ingredients, and even a butterfat chart. This book contains a complete index, which is helpful when looking for specific items.

One thing that is missing from this book is a recipe for an old-fashioned cooked custard ice cream base; all of the recipes are uncooked. While the uncooked bases are good, it would have been nice to have at least one recipe for real custard. Also there are no photographs.

If you're interested in making ice cream fast, this is a great and inexpensive book. Even if you don't plan to use their recipes for your ice cream base, the book has lots of good ideas for flavoring and preparing ice cream. I would recommend this book as an addition to your cookbook library; it's a great excuse to purchase a new automatic ice cream maker and eat ice cream every day of the summer!

If you like ice cream, get an ice cream maker and buy this book. Ben & Jerry make it extremely simple, yet open horizons to lots of flavors, flavor combinations, and nuances. A few recipes require some minor cooking, but many can be prepared in about 5 minutes plus freezing time.

Get this book, then jump in to whatever fruit is in season, and experiment widely. Chocolate and nuts can follow.

This book features a few basic icecream recipes and many simple variations. There is little technical information about ice cream or the freezing of ice cream. Many of the recipes use raw eggs, a dangerous practice putting consumers at risk for infection by Salmonella enteritidis.

These are all simple, easy to follow recipes. Even better than the recipe book that came with my ice cream maker. My first batch of ice cream was Cherry Garcia. WONDERFUL!!

compared to the other ice cream recipe books out there, ben and jerry's gives the most without trying to show off. 'homemade' is clearly written to spread the joy of desserts. whether you want basics or unique inspiration, you'll find it in this handy reference. there's a good selection of non-dairy and healthier treats, too.

Only thing that would make this book better is if they created an ice cream that would conform with the Adkins diet. Ice creams come out rich and great tasting.

I've had this book for over fifteen years and just bought another copy for my father. It's a great recipe book, and the colorful format makes it super fun to read - kids will love it. There's a lot of recipes in here... enough to keep your ice cream maker going for ages.

I have had and used this book for about 8 years now. I actually bought it from a Ben & Jerry's store when I lived in Vermont.

I have made some great ice cream since then and used just about every recipe in the book. In addition to ice cream recipes, they also include recipes for sorbet and other non-dairy desserts, as well as recipes for brownies and other "add-ins" for your ice cream. And the recipes are GOOD!

Just a couple notes to those of you who are expecting to not have to buy B&J again once you get this book. There's a lot more to making ice cream than just the ingredients, which are very simple - I can tell you right now it's cream, milk, sugar and if you want, eggs. That's it -- that's a "base" for whatever you want to add, like vanilla, chocolate, M&Ms, cookie dough, whatever. But B&J has really perfected the art of *making* the ice cream - putting in the proper amount of air, freezing it in the proper amount of time to reduce the ice crystal size, etc. I have found it very difficult to do this at home with normal ice cream making equipment. I used to have a regular ice/salt freezer that turns as you add ice and salt around the bucket to make it cold. Now I have one of those bowls for my Kitchenaid stand mixer that you pre-freeze in the freezer. It works fine - but here's a tip: After you make your ice cream mix, put it in the freezer for about 1/2 hour to make it as cold as possible (without turning to ice) before you put it in your maker. The faster the ice cream freezes, the creamier it is. Another thing, if you want more "volume" (less dense) ice cream, whip some air into it before you put it in the maker. Some commercial ice creams have as much as 50% air! Gee, no wonder when it melts there's only 1/2 of what I thought I had! ;-)

Just one issue I have had with the book is that it does not include a recipe for a custard base, which is basically the milk/egg/sugar mixture cooked until it's thickened, then cooled and churned in the maker. Maybe they don't sell this "frozen custard" and that's why they didn't include it -- but I really like the texture of this type of ice cream better.

Very good publication. Many recipes and ideas. Bought it to go with an ice cream maker for a bridal shower gift. Everyone loved the idea!!!!
