The first time I bought a pressure cooker I was on the phone with a friend to make sure it didn't explode and kill me without anyone knowing it! 12 minutes later I had the best split pea soup I have ever tasted in my life! No peas to puree...just PERFECT! The next thing I tried with Lorna Sass's guidance was Rissoto! Holly cow and I didn't even follow her exact receipe just used as a guide to make mushroom, cheese Garlic Rissoto...it was unbelieviable! My Sicilian Sweetie couldn't believe it.. have you ever made Risotto the old fashioned way??? Hey trust me it's easier to buy a pressure cooker and Lorna Sass's book and it will turn out perfect! Since then, I have created perfect Roast, perfect Turkey, the cabbage pot of Irish stew and sent my friends home wanting the book! I made the corned beef and cabbage for St. Paddy's day one year and my friend who didn't like corned beef took the left overs home! I tried making corned beef in a crock pot and the tough rubbery nightmare put me off the crock pot for years! I am telling you this book is wonderful. I use it as a reference book more than anything. You have no idea how many friends have purchased pressure cookers because of this book and the meals it has helped me come up with!

If you're cooking meat and you aren't planning to grill it outside...trust me the pressure cooker is the way to go, and if you want a wonderful instruction manual for your pressure cooker look to Lorna Sass! She's a true artist, and she'll make you seem like one in the kitchen too!

I love this cookbook. I've never had a bad meal from this cookbook. This cookbook is versatile. Each recipe has notes after the main recipe that allow you to vary the ingredients and spices. One master recipe makes many variations.

I especially like the pasta with meat sauce recipe. You brown meat and onions, add spices and wine, then water and dry pasta. After mixing well you put a can of tomatoes on top and seal the pressure cooker. After 5 minutes at high pressure you have a great pasta dish. Everything cooks quickly in one pan.

Another winner is the risotto recipe. With classic risotto you need to add broth a little at a time and stir constantly for a half hour or more. In the pressure cooker there is almost no stirring and the risotto is ready quickly. Sometimes I add scallops to the risotto after I open the pressure cooker and they cook quickly in the residual heat.

Those are just 2 of my favorite recipes from this book. There are many more. It is a great cookbook and one I use frequently.

So, Ms. Sass: Here is my review. I am very, very happy with the cookbook. It deserves five stars. I made the classic Beef Stew EXACTLY according to the instructions. When this was completed - - I am not even kidding you, it was a CULINARY TRIUMPH!!~ Thank you for doing such a definitive book on this modality of cooking. It even tastes healthier than microwaving. What was especially interesting to me was the intense flavorfulness of the stew, it makes you want to sop up the remains with a piece of bread. It is that good. I just wish it would be in a spiral bound book so that it would lay flat on the counter as you begin preparing the recipes. Get this book, folks. It is so worth it. Again, Ms. Sass, thank you for your time and efforts that went into this labor of love. You have blessed all of us.

This cookbook has some great 1 pot meals for busy moms. And they are not boring! There are some great ethnic recipes including Moroccan Stew and Chicken Curry. I never used a pressure cooker before, but in the last 2 months I have used it at least once a week. It forces me to try new recipes and that makes dinner much more interesting.

As a newcomer to pressure cooking this book has served as informative guide as well as a source of recipes that are simple and fast to make. Wildly inaccurate cooking times for those of us living at higher elevations but it's easy to adjust for that.
This is a very good first book for a new pressure cooking devotee like myself.

I'd hoped for a good old-fashion pressure cookery resource, with basic, clear and handy instructions and guidlines on timing & liquid amounts. My guess is that most cooks who use pressure cookers are simply looking for a quicker way to get dinner on the table, adapting their own commonly used recipes. This book is not representative of the 'grandma's kitchen' type of pressure cookery that I was personally looking for.
The first 20 and last 20 pages offer a lot of helpful information though (especially for the novice PC cook) including the different types of pressure cookers, where to get them, how to use them, timing charts for meats, grains, beans and rice. For many this may balance what I felt the book was laking - just basic pressure cookery instructions and good old-fashioned recipes.

It has a great variety of recipes in it and covers quite a broad number of types of pressure cooking.

After reading the reviews on different pressure cooker cookbooks here on Amazon, we bought 5 of these to go along with pressure cookers we were giving our children for Christmas. Two of the kids (adults, obivously) have reported back with good reviews on the recipes, but especially liked the information about how to use the pressure cooker and revise your own recipes.

Decent, but the lay-out is problematic enough that I won't purchase the book (I borrowed a library copy to try it out). It is formatted like a text book. Recipes should be presented so that it's easy to find your place when you glance away.I would have preferred the recipe sections to use bold print, itemize ingredients and list the step-by-step instructions more clearly. The print is faint & the variations on the recipes are lost in the text. For ex., the Junior League cookbooks have a legible, orderly format & it's fun to flip through them. There is nothing eye catching about Pressue Perfect so I am not all that eager to refer to it. Just personal preference...

After all the experience that this pressure cooker prima donna has had a chance to glean over the years I was hoping for plenty of expert advice, not just recipes for another stew, and great advice is just what she delivers! There are tips enough in here to make up an entire cooking methodology for this wonderful time-saving device. Then she adds to this her "transformations", which alter a recipe, with easy changes, into an entirely different potastew. On top of that (no pun intended), she gives us recipes for two-tiered dinners that offer potatoes and meatloaf in the same pot, among others. Hats off to you, Lorna! I highly recommend!!

I am not necessarily interested in all the recipes in the book (why would I want to make desserts in the pressure cooker?) but this book has excellent information on the differences between conventional cooking and pressure cookery. I consult this book whenever I need to adapt one of my recipes for the pressure cooker.

I recently bought an electric pressure cooker off of QVC and needed some recipes. I would use my old regular pressure cooker once in awhile, but only to do meats in and nothing fancy. This cookbook explains alot! It really walks you through everything and has variations on the same recipe. I have not made anything yet, but will make something tomorrow. I know it will be easy because you are walked through it all. Now I just wish I had bought 6 qt instead of a 5 qt! I hope the author comes out with another recipe book as I am looking forward to more recipes/

I have had one of the new types of pressure cookers for several years, and I always wanted to use it more but found it difficult to find high quality reliable recipes.

I am delighted with the delicious recipes in this book, and with the range of tastes. I have not come across a recipe that doesn't cook well and taste great even the first time around.

It's a fantastic book for people just starting out, and I would have rated it 5 stars if it had some photos of the meals.

I recently purchased my first pressure cooker and this book. Wow, what a combination. The short recipe booklet that came with my cooker actually refers readers to the Lorna Sass books.

I made the meat loaf and cheddar smashed potatoes, last night, and it came out wonderfully. It really did cook in 10 minutes, as hard as I found that concept to accept. In the interests of health, I tossed my microwave over a year ago (along with Teflon coated pans). Since then, I have had to deal with really long cooking times at dinnertime. Well, with a pressure cooker and recipes like these, I now know that I can get dinner on the table in record time even if I start cooking later than I should.

I am so impressed with this book that I also ordered 3 other of Lorna Sass' titles. I was also elated to discover that she has a website with lots of useful information, and where you may obtain signed copies of her books. Readers are invited to leave comments or to email her with any questions. To my surprise I got a personal reply within 5 minutes of sending the email! Bravo for Lorna.

I have cooked with pressure for 15 years. If you need the basics this book is OK but the recipes I've made aren't all that good--I have yet to find one that I want to make again. If you are looking for tasty recipes, I highly, highly recommend "Pressure Cooking for Everyone" by Rodgers, et al. It has recipes that I make over and over, and still has enough basic instruction for the novice.

`Pressure Perfect' by Lorna Sass, the author of two other pressure cooker (PC) cookbooks among 12 books which feature vegan and vegetarian specialities, is a general manual on how to apply the pressure cooker to a wide variety of `applications' as my Food Network hero, Alton Brown would put it. Now that I think of it, I don't recall Alton's doing a pressure cooker episode on his `Good Eats' show, which confirms my suspicion that the pressure cooker has not entirely recovered from its doldrums. This initial impression is reinforced by the fact that I have seen no reviews of pressure cookers lately in either `Consumer Reports' or `Cooks Illustrated'.

I thought to review this book when I noticed contestants on the `Iron Chef' (Japanese) and `Iron Chef America' show used a `PC' for selected dishes. Since they have a premium on preparing dishes that taste good, this gave me reason to think this old war-horse from the early 1950's may have overcome its drawbacks. This is especially true since there are now several newer models with features that correct a lot of the safety concerns the older models had. And, in reviewing a book on the microwave oven from Barbara Kafka, I was at least partially reassured that this gadget had its value in the average amateur kitchen.

The pressure cooker belongs to that class of potentially useful, but not totally necessary utensils, which includes the microwave oven, the food processor, and the slow cooker. There is probably not one dish you can make which requires any of these gadgets (unlike a grill, which is necessary to do certain types of fast seared food). All offer opportunities to do the same job in less time than your conventional braising pot, knife and chopping block, and casserole. The problem is that each one comes with a drawback, although I would be hard pressed to find any complication introduced by the slow cooker aside from the extra space it requires in your kitchen cabinet.

I believe the `PC' involves several drawbacks, some of which it has in common with the microwave. Both suffer from the fact that if a recipe involves any mid-recipe stirring adding, of fiddling of any sort, opening up the gadget and getting at the food is a nuisance. And, I suspect the nuisance level is a lot higher with the pressure cooker, as it requires one to bring the pressure down to ambient by a method which is either slow or hazardous. Another problem for many cooks is the fact that the pressure cooker is relatively heavy and bulky. I'm constantly surprised at how many people find things like an 8-quart Le Creuset casserole far to heavy for practical work.

While this book did little to answer these problems, it actually introduced some to me of which I was unaware. The first is that to use it effectively, you really should have one rated at 6 quarts or more. This exacerbates the problem of weight. The second is that cooking things which foam up such as beans and other starches means you must cook at a lower fill level to avoid clogging the pressure release vent. Another surprise is that pressure cooking techniques don't work as well on electric range elements as they do on gas, due to the long time it takes for electric `burners' to drop in temperature.

Aside from all these considerations, pressure cooking shares with microwaving the problem that you often can't brown food with the pressure cooker, and if you do before turning on the pressure, much of the advantage obtained by browning is dissipated.

This book also did not allay my biggest fear about pressure-cooking. Pressure cooking works by cooking in water at temperatures above the limit of 212 degrees F, leading to being done cooking faster, without the adverse effects of cooking in oil. The additional premise is that this technique works especially well with inexpensive cuts of meat, the kind one would usually cook with a braise or even a slow cooker. The problem with the pressure cooker premise here is that while the high temperature will cook to safe doneness faster, it may actually dry meat out. This is the great paradox of long cooking in liquid. It is also why most conventional cooking methods work at a relatively low temperature, so that the gelatin and fat in the meat doesn't cook out entirely.

Now I'm quite well aware of the fact that what I have just reviewed is more the method of Pressure Cooking than Ms. Sass' good book on the subject, but the issue of pressure cooking is exactly the reason for buying or not buying this particular book.

If you are a long time pressure cooker practitioner, I can recommend this book, primarily based on the fact that it covers virtually every different kind of technique to which the gadget could possibly be applied. I also compared the book's recipes for making winter squash soup and risotto to my favorites, and found the cooking time is dramatically reduced, especially in the time required to cook the squash. On the other hand, you get no opportunity to add flavor to soup by roasting things like squash or tomatoes.

The book is nicely organized with lots of variations to recipes; however, I would have preferred that such important dish as `chili' be made a main recipe. I'm also skeptical when I see a puttanesca PC recipe, since all the best puttanesca sauce recipes are done within 15 minutes anyway.

My main reservation for newbies to pressure-cooking is that the book contains no pictures of the various models, illustrating the different types of seals and pressure release gadgets. If you are not a long time pressure cooker jockey, but you like to experiment with cooking methods, the book may be an excellent addition for quickly cooking dense or otherwise slow cooking stuff such as potatoes, beets, celeriac, beans, or sweet potatoes.

Some good recipes - but NO pictures. I like to see what food will look like. Also, some recipes have too many steps for me and some have a LOT of ingredients. But quite a few good recipes.

I purchased this book based on the positive reviews and it was worth every penny and then some.

This is my first time using a pressure cooker and the instructions that came in the box didn't make me nearly as comfortable as reading this book. The information on what to do and why was clear and easy. Not only does the author include great basic recipes, there are also variations and enough tips that you feel confident adding your own ingredients without disaster

Since getting Pressure Perfect I have made Oxtail Stew (one of her variations), Beef Stew (using ingredients on hand), and the Pots of Chocolate (OMG - Chocolate Heaven, just make sure to use good chocolate)!

My husband is a meat and potatoes guy while I like trying new things. This CookBook has a great variety to choose from and covers both of our tastes.

So far I have enjoyed the recipes in this book. I made the split pea soup which everyone love. I have also made the beer braised bbq ribs. My son really loves these. The parmesan chicken packets were excellent. The book gives you background on pressure cooking as well as some tips and tricks. So far I have found this purchase very useful.

The author of this cook book is obviously not a writer and has no knowledge of how to write a cook book. This is the worst piece of garbage I have ever tried to read. She writes is as if it were a novel. Such as some of the childrens books I read to my grand kids. Also, it would appear that most of the book is only copies she has taken out of other cook books and has not done a very good job of it. I would like to send this back to amazon for a refund!!!!!

It's not often that a cookbook changes the way you feel about your cooking skills. Once I started making recipes from this cookbook, my image of my cooking changed. In my mind I went from "good" to "exceptional!" This cookbook is filled with easy recipes with little extras that make food gourmet. Also, many of the recipes can be made in advance and frozen. I regularly make the Chicken Cacciatore and the Beef with Beer and Mustard. And don't forget to try the Chicken Salad recipes. They are delicious.

I have dozens of cookbooks, yet this is my absolute favorite.

I have owned and occasionally used a pressure cooker for the past 7 or 8 years. I decided to purchase a pressure cooker for my single working daughter whose life is very busy but loves to cook. I saw Lorna Sass' cookbook listed as something other customers had purchased and I decided to buy one for each of us. I have enjoyed reading the first 22 pages of introduction which has been helpful even after owning and cooking under pressure for years. I decided to spend some time today testing out Cooking Under Pressure (so that I could tell my daughter a few to try). I made 4 of the recipes and they were all fantastic. The Curried Coconut, Chicken, and Sweet Potato Soup (I did substitute butternut squash) is amazing - 7 minutes cooking time - what a winner. If you buy this book you must try the Meatloaf with Cheddar-Smashed Potatoes, everything cooks together and I can't even describe how moist the meatloaf was and how flavorful the potatoes come out. The Mocha Chip Cheesecake is cooling in the refrigerator so I haven't tasted it but it looks wonderful and took no time to make. I have a huge library of cookbooks, consider myself a gourmet cook and occasionally teach cooking classes. This is my new favorite cookbook. I'm anxious to test out the recipes that have been recommended by other reviewers.

Would recommend this book to anyone who needs quick easy recipes.
Not many pictures, but the things I've tried have all turned out great.
I've looked every where for a pressure cooker cook book. This is the best price you will find anywhere. The beer spare rib recipe is my favorite. I use short ribs, they're great!!!

I am seasoned cook, but a novice at the pressure cooker. I purchased this book based on the reviews, and I was not disappointed. I read the book, literally, from cover to cover. What I enjoyed about the format of the book was that each recipe gave a "foundation." After each recipe there were easy to follow "variations" and "transformations." For example, the chicken cacciatore recipe had a "transformation" that included pasta. It came out perfectly, with rave reviews. More importantly, I cooked it all in the pressure cooker (dried pasta and all)in less than 20 minutes. This book "transformed" me into a pressure cooker lover too!

Not your mother's pressure cooker! Order a couple of cookbooks for pressure cooker's and take off. Try making cheese cake - you won't believe how good it is. Love the choice of a small pot or large. You will feel comfortable using this cooker.

Ms. Sass is the expert on pressure cooking. She has done her work over the years experimenting for you. She explains in detail the workings of the p.c. (pressure cooker). She explains everything you want to know about pressure cooking except for canning. That would be another book. This is a must read book for the novice or the people who did not get their manual with their p.c.

I have made several recipes in the book which were delicious. I recently purchased an electric cooker and find I need to add more liquid to the recipes. I'm looking forward to enjoying more of the recipes.

This book is great for the experienced cook who's fairly new to pressure cooking.

I love to cook and use lots of different cooking equipment, but the pressure cooker was a little bit intimidating at first, I guess because of the stories you hear about the old ones blowing up. The new pressure cookers have many safety features that eliminate the need for concern.

Every recipe that I tried turned out beautifully. The directions were clear and concise, and there were many varied and unusual choices. I have 3 of Lorna Sass' pressure cooking books and love them all.

For anyone who wants to make great and interesting food fast, this is a must have.

We bought an Electric Pressure Cooker that has all these blinking lights, looks like a Space Ship and had NO useable recipes. I was referred to this book by the seller of the cooker and we NOW use it at least twice a week. The Recipes are fast, easy and VERY GOOD.

Very good and useful book. I found important tips about how to use the pressure cooker and deliciouse recipes too. Before having this book I was a little afraid of using the pressure cooker..now it is the cooker I use the most!!!

This is an excellen cookbook good for new pressure cooker users as well as experienced users. There is a lot of information about how to use the cooker, but organized in a way that doesn't make each recipe too verbose. There are many recipes that I am eager to try and many variations and transformations that I'm looking forward to experimenting.
